Hi! I’m Amanda.

{WIAW #58} Easter Sweet Tooth

April 3, 2013 by Amanda R DeWitt

Hello Friends! To start off this WIAW or What I Ate Wednesday, here is what I’m eating now: a big bowl of deliciosity.   Or the delicious trifecta: Peanutbutter Cheerios (must try!), mini semi-sweet chocolate chips and one sliced banana. This is also what my room currently looks like: and that’s only half of it…which is…

Success! Rice and Edamame 3 Ways

July 9, 2012 by Amanda R DeWitt

Hello Friends! I’ve been devouring this batch of edamame and rice I made last week for three days.  That’s the beauty of cooking for yourself (and yourself only)…leftovers! I boiled a bag of frozen edamame in their shells and set it aside to cool. Then in the same pot, I prepared some boil-in-a-bag rice, which…

Clean Out Yo Fridge Nachos

May 8, 2012 by Amanda R DeWitt

Easter Egg Wrap

April 12, 2012 by Amanda R DeWitt

Hello Friends! I took half a dozen colorful, hard-boiled eggs off my grandma K’s hands.   I know, I’m such a sweetheart! I hadn’t had hard-boiled eggs since I flopped trying to make them (p.s. check out that post!  Made me laugh looking at it today!), then perfected the skill a couple of months ago. But…

Leftovers 101: EAT THEM ALREADY!

September 2, 2011 by Amanda R DeWitt

Being in my current situation…no kiddos and no husband to feed, a Daddio who usually only eats popcorn, and the BF who I don’t have to cook for every night…I usually have lots of leftovers!   I find myself eating leftover enchiladas (I always try to spell that with two ‘l’s) and pizza days in a row…
