Hey friends! I made you some delicious and fancy looking turkey lasagna roll ups today. They are flavorful, indulgent, but slightly healthier than regular lasagna. Plus the adorable rolls are perfect for portioning.
I can’t wait to make these little guys for company in our new home. Seriously, I am so excited to get moved in. Closing day is in 10 freaking days!!
We are actually taking a week right away to strip the wallpaper (it’s everywhere haha), paint all of the walls and get things cleaned up before we move our furniture in. It was an estate sale and the kids who were selling it did not get it move in ready, but that just means we could pick the paint colors we want…right? And that goes for the rest of the house that needs updating…right??
I guess you could talk to me in a couple of months and ask me if I am happy with picking a fixer upper.
Back to the turkey lasagna roll ups!!
I was looking through Pinterest one day and came upon a spinach lasagna roll ups from Budget Bytes. I had just heard about her blog from the Food Blogger Pro podcast (which I was obsessed with for a little while) and may or may not have fallen down a rabbit hole on her blog.
When I emerged from said rabbit hole, I pinned her spinach lasagna roll ups and then started seeing lasagna roll ups everywhere.
Does anyone else notice this? When you have a certain thing on the brain you start seeing it EVERYWHERE.
So of course I had to try it out.
But my own version of course. I’m kind of a carnivore.
I actually used to make lasagna all the time. It was something I would make for company because it felt kind of fancy (remember, I’m from Nebraska), most people love it, and it’s relatively easy. Time consuming with all of the layers, sure. But it’s hard to mess something up that goes into one pan and bakes up together.
Just make sure not to over bake it.
Can I make a confession? This recipe tasted uh-mazing, but I’m a little on the fence about whether or not they need to be rolled up.
It is super cute (if you get it rolled right) and it also helps with easy portioning. BUT you do have to prep the noodles. I’d suggest prepping the noodles and meat on a different day if you know you won’t want to spend all of that time in the kitchen during the week OR make this as a luxurious weekend meal (where you crank up the music and spend some time in front of the stove).
Another confession: I might be overestimating the time you will be in the kitchen because for some reason I decided to boil the noodles 2-3 at a time. Later I saw on other recipes that they just put all of the noodles in at once. I just know that this took me a bit of time and I was racing the sun so I could take decent pictures…
Ooookay. Enough of my rambling! Onto the delicious turkey lasagna roll up recipe!

Turkey Lasagna Roll Ups Recipe (scroll down for printable recipe)
Ingredients:
1 pound ground turkey, browned
12 lasagna noodles cooked al dente (aka slightly firm—check the package for directions)
1/4 tsp salt
1/4 tsp pepper
1/4 tsp Italian seasoning
23 ounce jar Prego Italian sausage + garlic pasta sauce
1/4 tsp spicy pizza seasoning
15 oz (1 + 3/4 cup) cottage cheese
2 eggs
2 cups Sargento 6 cheese (mozzarella, smoked provolone, romano, fontina, fresh asiago, parmesan)
How To:
Preheat the oven to 350 degrees F.
In one bowl, mix together the browned hamburger, pizza seasoning, salt, pepper and pasta sauce. This is now your red sauce.
In a separate bowl, mix the rest of the ingredients EXCEPT the lasagna noodles and half of the Sargento cheese, making sure to break up and mix the eggs. This is now called your white sauce.
Pour half of the red sauce into a 9×13 inch baking pan.
Spread a thin layer of white sauce on each of the lasagna noodles (about 1-2 TBS), then roll them up and lay them on top of the red sauce.
Once you’ve used up all of the white sauce (there may be an extra lasagna noodle or two but this is good just incase one or two of the noodles tear), pour the rest of the red sauce on top.
Layer the rest of the cheese on top of that, cover it in foil and stick it in the oven for 20-30 minutes at 350 degrees F.
Note: this recipe involves prepping the meat and the noodles beforehand which you don’t have to do at the same time…but you could if you have a couple of hours to make dinner. You can always just use the ingredients to make it like regular lasagna (see lasagna noodle box if you need help or this post.)
Semi-healthy note: I added ground turkey because it’s a little lighter and to change it up from the norm, but you can always use ground beef (which has its own benefits) or even leave out the meat. I also love using tons of red sauce because it’s packed with veggies. You could even puree some extra tomatoes into the sauce for more veggie deliciousness. I also used cottage cheese instead of the traditional ricotta because I adore cottage cheese and it’s also a little lighter. Use what you like though!

I really enjoy Budget Bytes! I’ve used a few of her recipes. Also I have started making my own version of lasagna lately–skillet lasagna. I got the recipe idea from Dessert for Two. It’s super easy and doesn’t require as much time as regular lasagna. But this sounds super tasty, too! Yay for moving soon!
