Dave and I were able to make it back to Nebraska for a very short trip Easter weekend.
I posted about half a sentence about it on Sunday, but wanted to dive more into the food and fun today.

Friday
First off, there were plenty of road-trip snacks. It’s only a 6-7 hour drive (only..ha! if I talked to myself a year ago that distance would seem crazy), but I wanted to at least TRY to resist the temptation to get the crazy expensive slash salt-and-sugar-ridden snacks from gas stations. Also I didn’t want to leave certain things at home to go bad..such as the bananas.
We did stop for fast food both ways on the trip. I really try to stay away from fast food eats…the more you read, the less you want to be anywhere near it, but sometimes it’s just necessary. The sandwich I got at Arby’s was okay but the Burger King tenders just tasted fake and grossed me out then the fries were super greasy. Am I becoming a food snob?? I did thoroughly enjoy a few of the Arby’s curly fries though!
We arrived just in time for me to get a short walk/run in…I mean it was 70 degrees and sunny in Nebraska…a far cry from the freezing temperatures in the twin cities! It felt like friggin’ summer!!
Then I stole some sandwich fixings from Dave’s parent’s house (since the Daddio’s house isn’t stocked like a grocery store like Dave’s parents’) and headed to hang out with sister Courtney, my dad and the cutest nephew you’ve ever seen in your life.

I could not get over how well he was kicking the ball around the house! He’s only 16 months old!! What frustrates me is that some nurse got sister Courtney all worried that he is “behind” because he isn’t saying enough words yet. He obviously makes up for it in other ways…no need to make my sister think her son is slow when he’s actually a little rockstar! //end rant
Saturday
Saturday we had a delicious feast of grill-out style eats at Dave’s parents house with some family and friends. I didn’t snap a photo since we were with people who don’t necessarily get me taking pictures of everything. Believe-it-or-not, there are people out there who don’t take pictures of their meals. *gasp*
It’s okay though because I took some selfies that morning to show how long my hair is getting. I am at the point where I need to decide to chop it or grow it out…also I have a hair appointment in two days. 😉
We then played some HORSE [basketball game] with some of the friends there and I actually got schweaty. I really wasn’t prepared to be HOT this past weekend since I wore a winter coat on the way to Nebraska!
I finished out the night with another turkey sandwich, a juice box and some twisted honey BBQ Fritos!! Those Fritos remind me of my childhood. I may have even eated half of them on my sandwich..
Sunday
Easter Sunday morning my mom, sister Rachel, sister Courtney, my nephew and Mama Sue all went to Panera since Courtney was working all day (sorry to brother Josh…I think someone dropped the ball telling him about breakfast). I tried a souffle at Panera for the first time and it was pretty tasty. I got the bacon and spinach (<-semi-healthy, right?) souffle which was in a croissant. I always thought souffles were just eggs with stuff baked into them? It seemed more like a pot pie…but I’m no expert! I also treated myself to an iced chai latte sans the milk…but then I went and added cream and water to it because it tasted crazy spiced. I don’t think the gal knew to add water instead of the milk…I think she just poured the chai mix on ice!
The rest of the day (until we had to leave around 3pm) was spent with my mom’s side of the family at Grandma Kathy’s [my mom’s mom]. The immediate family went for a walk to the park and then headed back to help my nephew, basically the only kid there, find Easter eggs. Seriously, he is so cute I almost stole him and brought him back to Minnesota! I suppose his mom would have missed him though…
Grandma Kathy made a delicious turkey dinner and I made sure to sample each of the side dishes…and took home a handful of her famous sugar cookies (which I may or may not have just finished while typing this post). I also added to this some on-the-fly egg salad onto that sweet honey bun after an egg war. (does anyone else’s family do egg wars?)
It was certainly a short and sweet trip with lots of delicious eats! I miss my family already and am sad I didn’t get to see as many friends as I would have liked, but we will be back soon…God willing!!

Do you have any weird holiday traditions? BTW an egg fight is where you take your hard-boiled eggs and one at a time hit your opponents egg…the one with the most cracks loses. Obviously a very serious game. 😉

Yes Arby’s tends to be our pick. It used to be subway but I think we burnt out on it. Also the towns we get Subway in don’t seem to have the greatest vegetables..brown lettuce galore.

I’m glad I’m not alone! I used to eat Taco Bell all the time but now I’m so skeeved out by fast food in general.
