{WIAW #43} Cupcake-arific Eats

Hello Friends!

After a long day of driving and school (I left my lab notebook at home today…an hour away…le sigh), I am excited to shower off the rainy day and unwind looking at pretty pictures of my food.

I present to you the 43rd edition of WIAW on this Semi-Healthy blog in the form of random food pictures from the weekend.  I’m realizing I ate out A LOT, but did choose semi-healthy options.

{Leftover from breakfast at Village Inn}:

Half of an egg white omelet, mozarella cheese and red peppers (my favorite!), plus some whole wheat toast, applesauce, water and diet dew.

{Snackish dessert}:

This is one of my apple cider cupcakes that I made for the Halloween party Saturday…that I still haven’t recapped..or shared the recipe for.  (So stay tuned for my super awesome costume and easy but delightful recipe!)  Believe it or not, less than 100 calories!

{Lunch at Godfathers}:

I try very hard to get veggies into each meal (especially at a restaurant!), and I try especially hard to get a salad when the family gets together at our normal hang out place.  This particular meal was eaten at my sister’s baby shower!

{Dessert baby shower cupcakes}:

Rainbow confetti cupcakes.  Nuff said.

{Leftover dinner from Panera}:

Half of a sierra turkey.  This is pretty much my usual.  Friday I decided to try to crank out my nutrition paper at Panera, so I ordered their chicken noodle soup and a whole sierra turkey sandwich. 

I got a baguette with the soup, and chips with the sandwich, so I actually stretched this out to 3 meals: day 1: soup and baguette + a couple of bites of the sandwich, day 2: rest of the bitten half a sandwich and chips, day 3: rest of half a sandwich and fritos (okay this weekend wasn’t really that healthy…).  Also, please note that half of the sierra turkey is basically a meal’s worth of calories. 😉

{Desserty-vitamin snack}:

This was a deep chocolate Vitatop. 

These little guys are a bit pricey, but they are nutrient dense and taste pretty decent.  I let this one thaw 30 minutes and popped it in the toaster, then savored it by eating it with a fork.

{Snack}:

Kashi seven grain crackers.  I appreciate the Kashi brand for their health-ful snack that don’t taste healthy.

And last but not least…a new favorite from the Luna Bar family.  Chocolate Peppermint Stick Luna Bar!!

These bars are created for women (sorry Dave, I know they are yummy!  yes, he tried one before he looked at the box that says “the whole nutrition bar for women”) and are packed with nutrients, plus taste like dessert…which I clearly like.

After seeing all of my restaurant eats…I feel the need for some fresh foods in my life!  Grocery store, here I come!  (Tomorrow…I need to get to bed!)

    I stretched out pizza from this weekend, plus the extra roasted veggies I ordered–because yes, I ordered a cheeseless, toppingless pizza with veggies and extra marinara so I could make my own meal–for at LEAST three more meals. It’s cost-efficient, and you are definitely right in pointing out that a typical serving at a restaurant is not necessarily how much we should eat all at once. 🙂

      Oh yes I love adding toppings to leftover pizza! Fyi, broccoli, diced very small can be awesome on pizza. 😉

    I LOVE the peppermint stick Luna Bars, an absolute favorite of mine. 🙂 And vitatops are soooo good. I really like the banana chocolate chip one I tried over the summer.
