Truth be told..I just came up with too many pumpkin ideas for one pumpkin week.
The Pancake Paradox
You know what’s weird? I don’t think I made pancakes for two years straight before October of this year.
I think I was intimidated for some reason.
Yes, I’m weird, but let me try to explain..
Maybe I went for too long without making them and then failed at one batch and didn’t even try for two whole years. It was like the thing that grows more and more daunting the longer you don’t do it. When really..it’s just pancakes?
Maybe it was the time commitment for a breakfast item. I am usually a hangry monster when I wake up and have no patience (or time) for cooking my breakfast. Thus I typically go with some version of nut butter on toast.
But once I got my FlapJacked pancake mix from Blend Retreat, I was hooked. It’s my new favorite thing. Like I have to stop myself from eating them for breakfast, lunch and dinner. #firstworldproblems
Something I don’t leave out of my breakfast though is the peanut butter. You can tell me it’s unhealthy or whatever, but I do Jif peanut butter almost daily. It makes me excited to get up in the morning. That and coffee. #yesplease
I created the most amazing syrup to drizzle over the top using only 3 ingredients: pumpkin, maple syrup and peanut butter. Yes.
The protein pancakes are super thick and filling, the spices make you feel cozy and the melty syrup with a hint of pumpkin completes the perfect breakfast.

So anyways, after my two year dry spell, I’m addicted to pancakes now. I will cook up a big batch of them (usually munching on the first one as I go) so I have some for the rest of the week.
The best flavor of pancake mix I’ve tried from FlapJacked so far? The freaking Carrot Spice Flapjacked Protein Pancake Mix. It’s slightly spiced with little bits of carrot and everything. Who thinks of these amazing flavors?

Pumpkin Protein Pancakes with Peanut Butter Pumpkin Syrup (Makes 4 pancakes or 2 servings)
Ingredients:
1 cup almond milk
2 TBS pumpkin puree
Dry Ingredients:
1 cup buttermilk protein pancake mix (I used FlapJacked)
1 tsp cinnamon sugar
1/4 tsp pumpkin spice
For the skillet:
coconut oil spray
butter
Syrup:
1 TBS PB
1 TBS maple syrup
1 tsp pumpkin puree
How To:
- Heat up a skillet on medium to medium-low heat. (You know it’s ready when you flick a little water and it sizzles.) Spray the pan with a little coconut oil spray and about 1 tsp butter (spread the butter around until it melts).

Mix dry ingredients together in a bowl. Add the rest of ingredients for the pumpkin protein pancakes and stir until just mixed. (It’s okay if it’s a tad lumpy.)

Portion about 1/4 cup of batter for each pancake. Pour it into the skilled and flip when the edges are slightly firm (or until it’s flippable..they won’t form bubbles on the top like traditional buttermilk pancakes).

Melt all ingredients for peanut butter pumpkin syrup in the microwave for about 30 seconds in a microwave safe bowl. Stir until smooth. (might have to nuke them longer. do so in 15 second increments and stir each time.)

Pour peanut butter protein syrup on pancakes and dig in.

So I already replied to you via social (I was on my phone when I originally saw this), but the “how do you find time” part definitely made me laugh! I haven’t posted a recipe in like two weeks so I feel like a total slacker!
Something that does help is setting a goal of one recipe a week on the blog and then just like with anything..you make time for it. 🙂 Another tricky thing I do is recipe testing in batches aka do a bunch in one week and spend the next month editing photos, writing the posts and retesting if I’m not 100% sure about something. In case you were actually wondering HA.
And YES you have to try this!! <3 <3

These stacks look divine oh my goodness! I wish FlapJacked had gluten free pancake mixes…I may have to just go with Kodiak Cakes and add the pumpkin myself. Also just wanted to mention I LOVE that you have the option to select “send email only if someone replies to my comment” in your comment section – I wish everyone had this because I hate missing a chance to discuss with a reply, but the notifications for every single comment on a popular post get crazy!

Yeah I know they don’t specifically use gluten, but their oats aren’t certified gluten free at this time. :/ Def check out the recipe in this post because I just used the plain Flapjacked protein mix and added stuff to it! I’m sure it would work with Kodiak Cakes!
