Third of all, this is not my normal WIAW format, but it’s been a bit crazy around these parts with a funeral over the weekend out of town and leaving town AGAIN tomorrow for a wedding (not complaining…too much…just leaves little time for essentials like blogging…and laundry lol). Plus working at 6am yesterday and 5:15am today and driving an hour each way to my catering event was insane. I don’t care who you are, a 4:30am wake-up time will make you want to chuck your alarm clock out the window!
Also, the theme for Jenn’s WIAW link-up party this month makes me sad because my summer is ending this week! That’s right, I’m starting back to school on Monday and am NOT ready for it. :-/
Okay, enough ranting already! Here’s the main event, my Egg Bagelwich creation.
I made this after working my coffee catering job last week since there were extra bagels and I was pretty darn famished after all of the heavy lifting we do.
- 2 eggs
- 1/4 to 1/2 cup leftover veggies (I used cherry tomatoes and onion)
- pepper and sea salt to taste
- butter or margarine
- slice of pepperjack cheese
- 1 egg bagel

- Spray a microwave safe bowl with cooking spray to ensure the egg doesn’t stick.
- Whip up eggs in the bowl with a fork (or whisk) creating fluffy bubbles.
- Add vegetables, salt and pepper.
- Microwave on high one minute or until egg is almost completely cooked.
- Meanwhile, toast the egg bagel and spread butter or margarine on it.
- Place cheese on top of the egg mixture and finish cooking about 30 seconds.
- The egg-omelet type thing should be able to slide right out of the bowl onto the bagel.
- Smoosh together, cut in half and enjoy!
*Semi-healthy notes:
- The best way to lower the fat would be to eliminate the butter and cheese. Fat is not all bad, though. The cheese has calcium and the egg yolks have Bvitamins.
- Don’t be afraid of carbohydrates. You need them for energy. You might not necessarily need a bagel every day, but we need to indulge every once in awhile in order to avoid pig-outs. These particular carbs are paired with protein and fat that keeps your blood sugar in line and helps you to feel full and satisfied.

I used to love breakfast bagel sandwiches for breakfast but they are a no no for me now 🙁 I have never thought to make eggs in the microwave like that though so I will definitely try that! Had eggs on the brain all day since I was planning on hard boiling some tonight.
And when I am stressed I pick a favorite book or movie and a comfort food and try to relax, OR find a friend to chat with.
