Pumpkin Patching in Nebraska

I got to go back to Nebraska a couple of weeks ago like I talked about in my Thin Mint Cookie Pie post! I feel like we go back a lot..maybe a lot more than most people who live away from home do. I think both Dave and I miss our family a whole lot and can’t wait to move back. Fruity Energizing Protein Smoothie

This fruit smoothie has been on my menu for the past few weeks and I finally decided to photograph it and write it up for another lovely blogger. It has 2 ingredients–yup. Just two! You can see why this has been a regular smoothie recipe as of late!
The two ingredients are also shelf stable. This is so important when you are a sick walking zombie who can’t sleep at night because of the incessant coughing (me the past two freaking weeks) and can barely manage driving to work so there’s no way she’s doing a big grocery shopping trip for fresh fruits and veggies and almond milk to whip up a healthy fruit smoothie.

This caffeinated pumpkin spice protein drink is sure to give you the boost you need in the morning, after a workout and even makes a tasty afternoon snack.

Turkey Enchiladas with Fire Roasted Tomatoes

Turkey Enchiladas with Fire Roasted Tomatoes. I mean the flavor was rich with the tomatoes and a little spicy with the enchilada sauce, but not so spicy that you feel like a fire-breathing dragon. The texture was exactly as I imagine the perfect enchilada—soft enough to cut with a fork, but not soggy. This is the perfect simple, hot and tasty meal for these on coming chilly fall days. Plus if it’s just two of you, you might be able to extend this into another couple of meals. Might being the key word. They are pretty fantastic.
