Diary of a Semi-Health Nut

ramblings + recipes of a semi-healthy nut

Hi! I’m Amanda.

I’m a writer, chocolate chip cookie baker, blog designer, power walker, Instagram fiend, peanut butter toast lover and copious coffee drinker living in Nebraska with my husband and three cats. (also a fan of a good run-on sentence)

20 Questions About the Semi-Health Nut

June 30, 2014 by Amanda R DeWitt

Oh man I was looking through some draft posts today hoping that I would find something I could finish and throw on the blog so we can get heading back to the twin cities….and I found this old gem! It was a guest post for Heather almost 2 years ago! It’s funny how much can change in such a short period of time! For instance, I now live in Minnesota!

I hope you have as much fun reading the answers to these throwback questions as I did re-reading it! I will be back this week to announce the winner of the Apera bags giveaway, with a yummy sweet recipe, fitness tips, possibly another giveaway AND a Did You Know link-up! (This week the Did You Know will be posted on Thursday so you can enjoy your long weekend!)

—————————————————————

Intro questions:

1. Where are you from and how long have you lived there?

I’m from Omaha, Nebraska and have lived here my whole life!  I go to school in Lincoln (an hour away) and drive there three, sometimes four days a week now so I might be moving there soon-ish.

Also, just fyi…Nebraska is not all cornfields!  But my BF’s family owns a farm a couple hours west so I do enjoy hanging out there on occasion.  In the cornfields. 🙂

2. Do you have any siblings?
Yes, I have three!  I am the oldest (can’t you tell?  super organized, has it all together, etc?? kidding) at 25 years old with a sister Courtney who is 22 and expecting her first baby (my first nephew!), a brother Josh who is turning 20 and is a rockstar student that makes us all look bad, and a younger sister who is my baby at 12 years old and a complete fireball.
We are silly.

3. I know you didn’t come from a healthy living background, but has your family taken on a “semi-healthy” lifestyle like you?
Um, not really.  It’s funny because what I call “semi-healthy” is basically healthy eating in Nebraska.  Sometimes my sister Courtney will try to eat “healthy” (because she wants to be like her older sister..duh!) and my mom will do the same, but they tend to fall back on old habits.  Maybe when I am a dietician I will be able to tell them what to eat! 😉
4. How long have you and the BF been together and how did you meet? (c’mon, you know I had to put THAT one in there! ;))
Haha well Dave and I have been together over four years!  We joke that he “picked me up at Chilis” but really he had a friend that worked with me there and that’s how we met.  He stole a pen from me, I made fun of his “neat” vest he was wearing after coming in from work and it was all history from there. 😉 Also apparently he came in for over a year before I noticed him so we also joke that he “stalked me” for a year.

Another funny story?  He invited me to sushi and I thought it was with the group of friends that usually came into Chilis.  The night of he calls to pick me up and pulls up in his parents old Chevy and apparently we were going on our first date.
5. What are some of your hobbies outside of blogging and baking up tasty recipes?

Um those are my hobbies haha!  I used to scrapbook but blogging feels like scrapbooking a little especially when you get all fancy with photo collages.  I also run sometimes.  And watch Netflix (that’s a hobby, right?).

6. What is/has been your favorite class in school? (I’ll explain in the intro about your degree!)
My favorite class so far has actually not been a requirement for my degree…it’s my cardio fitness class!  I’m kind of a fitness nerd so it’s fun to have a class that actually is working on improving our cardiovascular fitness in two months.  I’m also not used to running with people and we run in a group about once a week.  I am usually grinning like a goober at the end of our group runs.  (See!  Nerd!)

Blogging:

1. How long have you been blogging? And how often do you post?
I’ve been blogging a couple of years.  I went from posting once a month to maybe 3-5 times a week.  I really try not to pressure myself with posting a certain number of times a week since I really need to focus on school right now, but inevitably I will get an idea for a post and write it up when I should be studying.
2. What is your favorite post AND recipe you’ve shared on your blog?
Well I love blogging about semi-healthy baking and my Whole Wheat Lemon Doodle cookies made a lot of people drool…including me.

I also like posts where I open up about things because those seems to help people, like my I am a Christian post.

3. What was your most memorable moment from the Blend Retreat?

Maybe seeing Lindsay drunk?  Errr tipsy?  (She hadn’t had a drink in YEARS!)  I also think this is when I found out Heather is awesome AND Christine bought me tequila…that was a fun night! 🙂

4. What is something about yourself that has changed since starting the blog?
Probably my confidence in both my ideas and my writing abilities.  I’ve also met some really amazing people through blogging and I am so so happy that I randomly decided to start a blog. 🙂

Food:

1. Currently, what is your favorite breakfast?

I usually do some form of nutbutter on toast or on a toasted waffle.  This week it’s been creamy peanut butter on a toasted Kashi wholegrain blueberry waffle topped with mini chocolate chips and sliced almonds.

2. Do you have any special food requests on your birthday?
I really have gotten addicted to sushi and it feels like a treat so that is where Dave and I have gone for my past couple of birthdays.  Growing up my favorite food was beef stroganauf so that’s what my mom would make me.
3. Growing up, what was your all time, can’t get enough, favorite food?
Haha oops, see above question.  Or in high school, mountain dew.  (yikes)
4. What is the ONE thing you’ve discovered (food related) from the blog world that you feel you couldn’t live without?

I think since blogging I’ve switched to whole grain flour in baking and I really enjoy the taste as well as the satisfying feeling of a “semi-healthy” dessert.

5. Pick one: fruity desserts or chocolate?
CHOCOLATE!!!!!
6. What is your foodie “kryptonite”?
Peanutbutter.  Or maybe cereal with chocolate chips.  I think I eat them every day now!

Fitness:

1. What do you love most about running?
I love putting on my ipod and listening to my worship tunes running outside.  Those are the BEST runs!

Recognize the shirt?

2. When is your half and how often do you train each week?
Well as of now…there isn’t one planned this year.  I really don’t have the dedication during this semester that I need.  When I do train, I only try to run three days a week and then do strength training twice a week.  Gotta let the muscles repair!
3. What other types of exercise do you enjoy?
I’ve always been a workout DVD gal, but I also try to get outside when I can (and when my allergies don’t hate me).
4. Favorite post run snack?
I usually do a small protein shake.  If I’m feeling fancy, I turn it into a berry yummy shake. 😉

I’d say I’ve progressed pretty slowly with blogging haha but in terms of how old the blog is, sure I may have you beat. 😉 It really is interesting to look back at these answers!

So this guy I like works at a restaurant and bar and I go once a week, with different friends and we never sit at the bar (yeah, he’s a bartender). We went on a couple of dates and even then, I still come in because my friends LOVE the fancy drinks and food (best mac and cheese ever). I hope it turns out as well for me as it did for Dave. 🙂

My emergency Fat bomb is almond butter, coconut oil, stevia, and shredded coconut. I keep a small container in my purse wherever I go in case I get hungry! I guess that would be my go to food.
