The last time I made hard-boiled eggs…there was a bit of a disaster. You would think that making a hard-boiled egg would be pretty basic, right? Isn’t this one of the first things one learns how to make? After mac n cheese and pb&j?
I was in the mood for eggs today and I decided it was time to revisit the boiling of the eggs. Egg salad sounded delightful and I was going to have it if I destroyed my kitchen five times over. (Well, hopefully the same thing wouldn’t happen because if I’ve learned anything…it’s what not to do when hard-boiled egg.)
Egg Salad Delight {Print Recipe}
Ingredients:
- 2 hard-boiled eggs (see below for how to boil and peel em)
- 1 TBS Sweet Baby Rays Sandwich Sauce (or spicy mustard or mayo)
- handful of spinach
- Piece of cheese for on the sandwich (or on the side)
- Sandwich thins

How To:
Boil and successfully peel an egg (this is for my reference because I’m sure every other human being is capable of doing this):
- Put eggs in a pan of water, making sure the eggs are covered.
- Place pan on stove and turn on high.
- Wait for water to boil, then continue to boil for 10 minutes.
- Turn off burner and move pan onto a different burner. Let sit for 5 minutes.
- Pour out hot water in the sink and fill pan with cold water to cool eggs.
- Right before peeling eggs, run under cold water. This makes the eggs infinitely easier to peel.
- Carefully crack egg shell and roll on the counter. You should be able to get the egg peeled in only a few “peels.”
Egg Salad Delight:
- Mash both eggs with a fork.
- Add and mix in sauce.
- Toast and lightly butter or margarine sandwich thins.
- Put salad on sandwich thins.
- Tear spinach into pieces and place on top of salad. Add cheese on top if desired. Enjoy!

The Daddio asked me why my diet dew wasn’t in the pictures…and I told him it was because I was trying to hide my obsession. Could that be true? I swear it’s in many of my pictures, but just so everyone knows…I have 2-3 glasses a day. Gotta be honest, love the stuff! I do try to have it along with water and food though to combat the caffeine high and crash. 😉
Hope everyone had a great weekend! I spent it pretty lazily, aside from last-minute nutrition homework and taking care of a sick BF. I got to chill and enjoy the cozy socks Mama Sue made for me. Note to self: learn to make socks like these!
