Fire-Roasted Tomato Hummus Recipe with Bacon [GF, DF, NF, EF]

This sweet and savory fire roasted tomato bacon hummus recipe will become your new favorite thing to dip everything into.

Is that too high of praise for some hummus? Possibly. But I really did use this hummus with allthethings.

Crackers.

Bread.

Wraps.

On top of salads.

On top of an amazing burrito bowl (recipe to come).

On top of…a spoon. Winking smile

Fire Roasted Tomatoes Are the Bomb

I mean, is this really surprising given my obsession with fire roasted tomatoes? And no, I don’t fire roast my own tomatoes. Yet. Talk to Meg about roasting tomatoes if you want to get all DIY. (and that’s not snubbing roasting your own tomatoes. seriously, do your thing. just get some roasted tomatoes for this recipe.)

The ones in a can are still amazing even in a can. Sweet and smoky and delicious. They helped me fall in love with tomatoes, after I had my first fresh, juicy slice sprinkled with salt. I kind of swear by them. And anything that helps get veggies into my body quickly and easily.

And how incredibly easy it is but I often forget about it? Or buy some from the store when I could make my own in five minutes? I suppose I do the same thing with guacamole (but I buy the little individual servings so the whole batch doesn’t go brown in 2.5 seconds), but someone please remind me how amazing this hummus was and how easy it is to make the next time I go to pick up a package at the store. k thanks.

This hummus recipe was originally going to be a simple roasted tomato hummus recipe, but..I saw the bacon. I was multi-tasking (which is usually a bad idea), baking some bacon (you know, in the oven) and mixing up my hummus..and bacon just seemed like it would complete the party. Which is really cliché to add bacon to everything, but I mean in this instance I will conform to the love of bacon (which as you will recall, bacon is something I didn’t used to like. I’m beginning to think that my food story is that I am a reformed picky eater.)

Fire-Roasted Tomato Hummus Recipe with Bacon 

[Gluten Free, Dairy Free, Egg Free, Nut Free]

Ingredients:

1 can (15 oz) chickpeas, drained (reserve bean juice!)

1 TBS garlic, chopped (about one clove)

1 TBS lemon juice (maybe half a lemon)

1 TBS tahini

1/4 tsp ground cumin

1/4 cup oil (I used vegetable..traditional recipes use olive oil but I don’t have any on hand)

1/4 cup bean juice (more or less depending on texture you want)

1/4 cup fire roasted tomatoes, diced and drained

salt, pepper and chili powder to taste

How To:

Really for this recipe, you just combine all of the ingredients EXCEPT for the tomatoes and bacon in a food processor until smooth and creamy. Then add your fire roasted tomatoes and bacon to the mix and process again until smooth.

You can also throw some extra tomatoes and bacon bits on top to be fancy. You know if you’re serving it to guests at a football game or something.

Or that might be too fancy for a football game…like I would really know. I do watch the Huskers on occasion because I live in Nebraska and I think it’s written in the Nebraska laws somewhere “thou shalt be a Husker fan if thou residest in Nebraska.” But I don’t typically throw football parties. Maybe one day when I move out of my dad’s house (can you believe it’s been 3 months since the move from Minnesota??) I will have people over. *sigh*

Anyways, make this hummus. And put it on allthethings and feed it to allthepeople. Smile

    You forgot veggies! You can put the hummus on veggies too! #eatyoveggies. 🙂 The hummus sounds fabulous and is a fantastic combination of flavors.

    I picked up some cans of fire roasted tomatoes last weekend at the grocery store. What can I say? Tomato season is coming to an end so I have to resort to the cans. Not that there’s anything wrong with those. In fact, I use them all winter long.

      haha TRUE. I actually don’t think I used veggies to dip this time although I thought about it with carrots..and then it was gone.
