Today I bring you a very fitting recipe for this time of the year…crock pot mashed potatoes! These tasty crock pot mashed potatoes will look uber fancy when you serve them, but between you and me…the crock pot does most of the work!
These crock pot mashed potatoes are perfect for whipping up for a holiday gathering. As a matter of fact…I will be whipping these up to bring to my family’s Thanksgiving this year! I’m a tad nervous since Grandma usually does the potatoes, but if all else fails..I will just add more butter.
Speaking of butter, you might be wondering why I consider these healthy at all. Poor potatoes, butter and cheese get a bad rap.
But let’s talk nutrition!
Potatoes are loaded with potassium, vitamin C and vitamin B6.
Cheese and milk have necessary calcium and protein. And deliciousness.
Chicken broth may have inflammatory benefits which is why broth is recommended when you have a cold. It also has a tiny bit of protein.
And butter? Okay there are some mixed reviews on butter, but this is a semi-healthy recipe so we will ignore the butter for now. Except for when you put it in the potatoes to make it mouth-wateringly tasty.
Very much like my crock pot taco chili, I got this idea from Pinterest. I saw this pin and became obsessed with the idea of making potatoes in the crock pot.

All you have to do is wash your potatoes, chop them up a bit and throw those along with everything but the cheese and milk in a crock pot to cook for a few hours. If you’re pressed for time, crank it on high for about 2 hours, but otherwise 4-6 hours on low should do the trick. When you can easily stick a fork in the potato pieces, it’s time to mash them up and add your milk and cheese.
