I have been in the best mood lately! Is that braggy? Sometimes when I’m uber happy or excited about life I almost want to hold back sharing for fear that others will roll their eyes and think I’m faking it (cuz who can really be that happy??), or will think “of course you’re happy because you don’t have x to deal with.”
Let’s be real. We all have our own stuff to deal with and we all go through periods of trial, but I just want to be happy and not feel guilty about it today. Cool with everyone? Okay!
Why am I so happy?
Funfetti cookies. The end.
Just kidding! Here’s a little list of things that are making me happy:
1. I’ve had a pretty full social calendar lately. It hasn’t always been this way since we moved to Minnesota a year ago and had to find some new friends (the crazy winter didn’t help with the socializing either), so I am really having fun connecting with people and trying out new things.
This weekend trying new things involved going to a hole-in-the-wall bowling alley with Dave, Mellissa and her hubby and then going back to their place to play the crudest (but hilarious) game ever: Cards Against Humanity.
This was at 8pm on a Friday night. There was also karaoke at 9pm. Anyone?
The next day I went to my first ever casino and won two whole dollars! I know right?? I could take or leave the casino’s smoky smell and the general fact that they are taking people’s money and possibly causing addictions…. but the moscato I had at the steakhouse was pretty amazing.
2. Some cool stuff is happening at work. That’s about as specific as I can be right now, but I can say..it makes me happy!
3. I got a surprise delivery from Fairlife slash Corepower (they are owned by the same company)! I suppose they liked my Nutty Coconut Cupcake post! As I told my Instagram folks, I’m pretty sure my apartment office manager thinks I’m a shop-a-holic with all of the packages I get..especially when I pick up 3 of them and don’t remember what is in the big heavy one!
4. I got Sims 3 for Xbox360 on Saturday. I started playing The Sims via computer when I was in 7th or 8th grade and have gone through slight addiction phases ever since. I refuse to play it while I’m in school or doing something like studying for the NASM exam, so I got really excited to play the game on my birthday in April (after a self-imposed two month ban for studying). BUT my old laptop refused to work and has been super uncooperative ever since. I finally decided to break down and buy a used copy for the sweet price of 19 bucks this past Saturday and I was absolutely giddy. This is the only video game I ever play, but I am a total nerd over it!
5. The weather has been freaking delicious. I was putting chairs outside today at the cafe and I just wanted to sit and drink it in. It’s been unseasonably cool and humidity free here which is PERFECT for the Bacon Chase I’m running with Dave, Alex and some other friends this weekend!
6. I’ve been writing more recipes and having fun with photography and editing! I just love getting into the groove of blogging and being excited about the content I’m sharing. I mean uber-excited (because I am usually pretty excited about blogging). Like I am giddy going to bed when I know my Sweet + Spicy Chipotle Burger recipe is posting the next morning. When Dave asks about my day, I tell him about the sweet recipe photos. (Nerd?)
Oh, and…
7. Chewy Almond Funfetti Cookies!!

Okay, I’ll tell you a liiittle more about these delightfully bespeckled and soft funfetti cookies.
I was drooling over this pin that I found on my Dessert [ I Heart Cookies ] board (yep. a whole board for cookies.) and I decided I was going to try my hand at some funfetti cookies.

I think what makes them funfetti cookies is that they have sprinkles in them…is that right? Correct me if I’m wrong! To make delightfully soft, chewy, buttery, perty funfetti cookies, all you need is a butterlicious sugar cookie recipe, a smidge of cornstarch and a gob of colorful sprinkles!
I decided to rock the patriotic theme since it is July…but of course you can change it up to suit the holiday or your mood! I had to literally swat Dave away from the cookies so I would have some for picture taking AND to bring into work since a coworker happened to see my Facebook post and we were working together the next day. They went over really well! Even at the healthy cafe. 😉
