It’s that time of year again- no, not college basketball- Girl Scout Cookie time! I usually have more boxes than I really need in the house, but definitely didn’t want to waste them! What’s a girl to do?
Make cookie bars of course! I give you Thin Mint Cookie Bars!
Thin Mint Cookie Bars
Yield: one 8×8 pan, 12-16 squares
INGREDIENTS:
Crust:
4 tablespoons unsalted butter, melted (1/2 stick)
1 sleeve of Thin Mint cookies, about 1 cup ground
Blondie Cookie Layer:
1/2 cup unsalted butter (1 stick), melted
1 large egg
1 cup light brown sugar, packed
1 tablespoon vanilla extract
1 cup all-purpose flour
1 sleeve of Thin Mints, crushed (not super fine crumbs as with the crust)
about 1/2 cup chocolate chips
DIRECTIONS:
Crust:
Preheat oven to 350F. Line an 8-by-8-inch baking dish with aluminum foil and spray with nonstick spray; set aside.
Grind thin mints in food processor or crush in a ziplock bag (work out that aggression!). Set aside. You want super fine crumbs similar to a graham cracker crust for cheesecake.
In a medium microwave-safe bowl, melt the butter in increments, around 1 minute.
Add the ground cookies and stir till fully combined.
Pour mix into to prepared pan and spread evenly with spoon or hands until you have a nice even thing layer. Bake for 8-10 minutess, or just until set. Under-baked crust is okay, itβs going back in the oven!
Cookie Layer:
In a large, microwave-safe bowl melt the butter in increments- I chop my butter in chunks to melt a little more evenly.
Wait about a minute to let the butter cool, then add brown sugar and vanilla and mix until combined. Add egg and whisk until combined.
Add the flour and stir until just combined- do not over-mix!
Stir in the crushed thin mints and chocolate chips.
Pour batter into greased pan
Bake for about 20 to 22 minutes, or until done and toothpick comes out clean. Cool before slicing and devouring!
Ummm…yes please! Krista has agreed to send me a full pan of these when I’ve passed my exam. Right, Krista? π

I pinned this recipe immediately so I wouldn’t forget to try it. I think my hands down favorite cookie is a frozen thin mint with the samoas (aka caramel delites?) in a super close second
