{WIAW #64} Park City, Utah Food

Hello Friends!

Yes, there still is more to share about the retreat I went on this weekend in the lovely Park City, Utah!

For those of you who don’t know, most of the bloggers there were very into food.  Some even call themselves foodies.  So you can bet there was a whole lot of good eats going on!

(This is no longer a wordless WIAW post as I went back and labeled the food and faces…)

{Breakfasts}

There was an omelet station on Sunday and I got regular eggs (there was egg whites, egg beaters, half and half-of what I don’t know, but I like my vitamins…and egg yolks have plenty of them!) with all the veggies available except mushrooms and some brie cheese to hold it all together.

I also got to try Chobani flips!  This one was Key Lime with Graham Crackers and White Chocolate Chips…so basically dessert!  I think I earned it though after boot camp Sunday!

Saturday I got to try Muesli Fusion with hot water to make it like oatmeal and then I added some Chobani for more flavor and sweetness.  Muesli Fusion is basically a mix of oats, nuts and other random ingredients like cacao chips with no added sugar so it’s not very flavorful, but it is healthy!

Since my pictures seem to be going backwards for breakfast, this is where I went on Friday with my Nebraska ladies.  Our flight left at 6am and we all ate a first breakfast around 5am….meaning second breakfast happened around 9am at this delightful little cafe called Penny Ann’s Cafe.

Apparently their sourcream hot cakes won some kind of an award, so I had to get those with my scrambled eggs I was craving.  It originally came with potatoes and I wasn’t into that, so when I asked for a substitution…tomatoes it was!  Tomatoes are one of those foods I didn’t used to like, but have been gradually adding them to meals.  I added a little salt and pepper to the tomatoes, cut them up and added them to my eggs and they were amazing!

{Lunches}

For lunch on Friday, we went to Plates and Palates, a hip little place that also sold kitchen utensils (I’m guessing that’s the plates part of the title).  Everything was very fresh and you could see them making all of the food.

Sunday lunch we went to Cafe Rio, which was recommended by Meg and I will recommend to anyone else who likes fresh, healthy Mexican food.  It is similar to the way Chipolte or Subway makes each dish in front of you.  Also they all yell “extra cheese” when you order extra cheese.  You’ve been warned.

I got the fish taco with rice and beans…so so messy but so so good!!

I also had the pleasure of hanging out with Heather and Tess since our flights were a little later in the day.  I knew the lovely Heather from last year and I adore listening to her tell stories (the sweetest accent!!) but it was also great getting to know Tess.  Tess and I both share the burden of trying to get our men in shape.  Okay it’s not a huge burden, but it’s nice to be able to relate to having our guys stay in hotels and seeing their health decline.  (So happy Dave’s hotel stay will be ending soon!!)

{Dinners}

Dinner Friday night was buffet style at the hotel.  I will be honest, the best part about this dinner was the company because maybe it was the items I selected…but everything tasted very….healthy.  And I’m only a semi-health nut so this was a little much for me! 😉

Saturday night I actually put contacts in (Friday night I was looking a little tired in my glasses) and apparently felt good enough to snap a selfie after my nap and couple of hours to myself.  I get a little overwhelmed in crowds, although I LOVED meeting so many lovely ladies, I needed some me time.  Also I’m pretty sure the elevation was getting to me because I had developed an enormous headache.  Thankfully I had time for that nap because it left me refreshed for the rest of the evening!

We had pizza at Vinto Saturday evening where I got to spend time with blends from last year as well as some new friends.  Such a great group!  Of course I can’t find a picture of my pizza which was of the Margherita assortment with added red bell peppers.

I am headed up to the twin cities (where I will soon be living) today!  I seriously have to get going now so that I don’t end up at Dave’s hotel at midnight again…wish me luck!!

    If you need a place to stop for coffee … or crash if the weather gets bad, you know where I live! (I’m home btw).

    I wish I would have gone out with you guys to dinner because I feel like I hardly spent any time with any of the girls that went to dinner at Vinto, and you were the ones I wanted to spend time with (besides the ones I went to dinner with as well!). I think this should be a week-long thing next year.

    However, we shall soon be neighbors … 🙂

    We need a seperate weekend just to EAT. There wa so much to taste – I totllay missed the Flip cups and a really, really want to try that Mexican. Preferably with you. 🙂

    I don’t know why I chuckled so much at the comment about the food tasting healthy. I guess you are right, though. I piled my plate and loved every minute of it. Especially those quinoa cakes and that SOUP!
