I hope all of you Mothers had an amazing Mother’s Day! I was only able to text my mom this lame picture…but I will be seeing her soon and hopefully she likes the surprise I’m sending to her work! 🙂
I am still hanging out in the twin cities with Dave and we actually went out and explored over the weekend. Saturday I got a tour around the apartments Dave has his eye on if his company ever gives him the official word about the job.
Speaking of which, apparently the paperwork for the position is just being held up by HR (he does NOT officially have the job)….which if that is really the case, Dave lost out on an apartment that would have been available the 20th of this month and now there aren’t any available until June 6th. I would love to personally kick someone in the shins for the way they have been jerking Dave (and me) around. It’s kind of nuts because the guy he’s supposed to be taking over for retired Friday…
Anyhow in order for us to feel a little better about life, we are basically planning for just in case. If he does get the job, I plan on going through my summer classes in Nebraska and then joining him up here. I have been putting off looking into it seriously, such as looking at school programs or work because I already did that when everyone told him he was getting the job in KC, but I plan on looking into that today. Just in case.
It has been pretty amazing thinking about living in the same city! The last two years of our relationship has basically been long distance or at least involved a lot of traveling. I cannot wait for the day that I can make Dave dinner and other equally cheesy ideas like that.
As part of the planning, Saturday we reserved that apartment (through the end of today….cross your fingers!) AND we found an amazing sectional couch for the living room…I am drooling just thinking about it now.
It has recliners and a pull out bed for all of the company we plan on having. Dave had to put a deposit on it to keep the sweet deal we got. Tip: be able to pay in cash to get serious dollars knocked off the price.
Sunday we wanted to keep the happy going, we decided to explore a bit. He showed me where he works, we drove around downtown St. Paul a bit and even ventured out to The Mall of America.
Confession: I don’t like malls.
Probably something to do with disliking crowds, not wanting to be a trendy girl who goes to the mall every week, and in general not having money to buy the clothes I want. But this mall is insane. I mean level upon level. I mean an amusement park in the center. I mean multiples of the same store/coffee shop. It seriously boggled my small town Nebraska mind…therefore this mall was okay in my book.
When our stomachs got grumbling (due to walking around 2-3 hours), we stopped at Bubba Gump Shrimp Co. Yep, a Forest Gump themed restaurant.
How perfect since I just ran a half-marathon with Forest himself?
When my feet started to sting because I was definitely wearing the wrong shoes for walking multiple hours, we headed back to the hotel for another form of happy…chocolate.
It’s been awhile since I’ve shared a recipe, huh? I checked and it was actually during the snow day we had in February that I posted a yummy oatcake recipe.
- 1 Box Dark Chocolate Brownie Mix (I used Betty Crocker)
- 1 egg
- 1 banana (in place of 2nd egg called for)
- 1/4 cup water
- 1 6oz cup Chobani Strawberry Banana Yogurt
- raspberry/strawberry flavoring
I got the idea from a shake I used to make at my coffee catering job. A customer actually requested we add banana and strawberry to our chocolate shake and when it turned out decadently delicious, it was added to our permanent menu.
These decadently moist chocolate goodness topped in raspberry love definitely ended our day on a happy note.
- 1/2 stick butter at room temp, cut into pieces
- raspberry flavoring or syrup
- 1 6oz container of greek yogurt (I used Chobani strawberry banana)
- 2+ cups powdered sugar
Although life can be uncertain, I hold to the hope that God has a plan for us! This instability has been the most challenging part of our relationship (and my life) thus far, so there MUST be something good coming, right??

There is actually hardly any lactose in greek yogurt…I’m lactose intolerant and I can eat it! 🙂 Otherwise you might as well go by the recipe on the back of the box. 🙂
