Almond Oatcakes

Hello Friends!

Happy National Pancake Day!  Well, two days early.

I’ve been teasing you with the yummy Oatcake pictures on my MIMM post and SHN Favorites post…so I thought I’d finally share the recipe!  Plus I’m sure you were wondering what you’d make for National Pancake Day! 😉


I took my Oatcakes recipe from last year and update it a bit.  (And made some homemade syrup too!) 

This batch was tested by my roomie AND Dave (the BF) and both approved.  Therefore they must be awesome..right?

Almond Oatcakes

Prep Time: 5 minutes
Cook Time: 10-15 minutes
Keywords: stove top breakfast oatmeal
Ingredients (10 pancakes)
  • 1 egg
  • 2 TBS melted butter or margarine
  • 1 + 1/4 cup almond milk
  • 1 TBS brown sugar
  • 2/3 cup oats
  • 2/3 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp maple flavoring
  • 1/2 tsp almond flavoring
  • I food processed half of this to the consistency of flour for a smoother pancake. If you use old fashioned oats without processing them, I’d suggest letting the batter sit about 20 minutes before cooking.
Instructions
Mix together butter/margarine and brown sugar. Beat in egg. Add milk, maple flavoring and almond flavoring.
In a separate bowl, mix together all dry ingredients. Add dry ingredients to wet ingredients.
Heat small skillet to medium heat and spray with cooking spray (preferably butter flavored).
Pour 1/4 cup batter onto skillet. Flip when bubbles form on top and the edges start to form (1-2 minutes depending on your burner).
As with any pancake, it might take a pancake or two to get the heat, flip and cooking time right. And you can always eat the “mess-ups” while ou cook the rest. 🙂 (I personally forgot the egg for the first pancake. The recipe needs that egg to bind the ingredients together…very crumbly, but delicious nonetheless!)

    Thank you for including the nutrition info! I don’t eat pancakes much anymore because of the carbs (not that I ate them THAT often before but once in awhile have a craving) but these are definitely do-able for me!

      Yes and the carbs are whole grain oats and whole wheat flour (and sugar..but you don’t have to add that)! 🙂

    Thank you for including the nutrition info! I don’t eat pancakes much anymore because of the carbs (not that I ate them THAT often before but once in awhile have a craving) but these are definitely do-able for me!
