Hello Friends!
(Thursday thoughts written Wednesday…late at night…after about 12 hours at school today. No joke. Chem test Thursday night so wish me luck!!)
The subject we were going over in this morning’s nutrition science class was carbohydrates, more specifically sugars. The topic came to lactose and my smarty-mcsmart-smart professor asked if anyone was lactose-intolerant, and I raised my hand.

Sometimes I talk in class, but usually I keep quiet. For some reason I’ve voluntarily participated in this class twice in the two weeks its been in session and been shut down BOTH times.
She started asking out of those who raised their hands if specific milk products or cheeses bothered them and for whatever reason I mumbled, “some of them.” Then she did the holding-her-hand-to-her-ear gesture because she is apparently deaf in one ear.
Since I realized she was trying to hear what I had to say since no one else was unknowingly digging themselves into a hole, I repeated myself.
“Who is talking?” she asked and looked around at the hundred plus students who were actually able to show up to the 8am class, despite the fact that a small blizzard had occurred last night. Of course Miss nutrition science didn’t cancel class. She also had a pop quiz at the very beginning of class that was ending as I rushed in, panting, 5 minutes after the start of class.
I raised my hand, but at the same time felt myself shrinking into my seat since I knew everyone was now looking at me. I was a little sweaty and disheveled and cold (yep, sweaty AND cold) from digging my car out of my parking spot this morning and didn’t exactly feel like being the center of attention. Miss nutrition science asked me what kind of things bothered me and I said that I could eat white cheeses and she abruptly cut me off.
“Cheeses are died orange, so all cheeses are white.”
As she went on about this and talked about “would we drink orange milk,” I wondered why the heck my stomach felt like a sharp knife was splitting it open whenever I ate cheddar cheese and at the same time make me feel bloated like the girl from Willy Wonka and the Chocolate Factory who turned into a giant blueberry and had to be rolled away to be juiced.
Then I felt embarrassed. Does the class think I’m lying about being lactose intolerant? Does everyone else know that cheese is dyed yellow/orange and that I’m a huge idiot? Before I knew it she was moving onto the next slide in the PowerPoint and I was left fuming and unable to concentrate.
The thing is, there IS something with yellow/orange cheeses that affects those who are lactose intolerant. I am not the only one who is affected by this..I actually have three friends that are lactose intollerant to varying degrees and I am not alone in the whole yellow vs white cheese debacle.

This is actually talking about how cheddar, the cheese that really bothers me, is yellow. It’s a pigment that is released during the cheese process that is actually in the milk but not activated. Yes, some cheese is dyed to make it look good (it started awhile back…people thought it looked better?), but my stomach issues are real! Obviously there is something different about white and yellow cheeses.

My only conclusion is that she became a teacher because she has so much knowledge and she likes to share it. A lot. To the point of needing to share it regardless of a person’s feelings or thoughts on the subject…or in this point, regardless of relevancy. Kind of like Sheldon on the Big Bang Theory.
Don’t be a know it all.
Hey, this applies to me too. Sometimes I think I come across this way and I cringe a little after I comment or remark about a certain subject (usually nutrition because I am IMMERSED in the subject). The thing is, the more I learn, the more I realize I really don’t know. Can anyone relate to that. Basically, we have to be at least a little bit open to other’s thoughts and views.
Just so we all know, my Teach Me Tuesday is more about sharing information that I find interesting or useful or what I really want to do is discuss nutrition topics. But I don’t know everything, I am still learning and will be learning for the rest of my life. Please feel free to share your opinions and thoughts on this blog or e-mail me if you think the matter is too personal. I want to know if I’m hurting feelings or if I’m getting my facts mixed up.
I actually had a gal tweet me that she loved my Banana Chobani Cookies that I made (PS You should probably enter my sweet giveaway of a variety of 32 ounce Chobani tubs for baking delicious treats.) and liked the fact that there was no added sugar.
Um, all of my cookies are made with sugar, so I realized I had made a mistake in my recipe and let her know. Then the truth came out…she was a little surprised when she made the recipe and tried the first cookie, but they were good after she got used to it. Good to know, right? I think I might try doing a breakfast cookie like Alex suggested the other day, so, good information.
I like this kind of feedback. It reminds me that I’m not perfect and I make mistakes. And to triple check the recipes that I put on the blog.
Lets all try to be aware of the fact that we don’t know everything and that our way isn’t always the right way. There are some things that I hold in my heart to be true, my faith in God will never waver, although I will question certain aspects of my faith, never the fact that He exists and is all powerful in control…but the rest? Really, who is fully knowledgeable in every subject?
I think we will learn more if we are open and not just trying to spew off facts at people.
And don’t try to tell someone they aren’t allergic to something when they say they are. Even if it doesn’t make sense.

I absolutely HATE when people make judgements based on their own need to feel knowledgeable or like ‘the expert.’ I never pretend to know much of anything, except for what I can glean together from internet research or magazines I’ve read. And I admit it when I have to eat my words, or thought something was true when it wasn’t.
The best point you make is that we are–or we SHOULD be–always learning, and what we all know is that ‘science’ is always changing its mind about things, especially when it comes to food and nutrition.
On a more random note, I can’t really tolerate cottage cheese too well, or ice cream, but most Greek and goat’s milk yogurts are just fine. So tell your prof. that there are aberrations. 🙂

That teacher sounds like a piece of work…I hated teachers who were so unapproachable and “all knowing”. Maybe she should consider that perhaps you might be allergic to the DYE that they put in orange cheese?! There are just so many other possibilities and she dismissed them at the drop of a hat. Sigh. Girl, I wish your teacher could read this and not only understand how you felt, but that she needs to open her mind a bit. She’d probably be baffled that the ONLY dairy product I can consume is Greek yogurt. No cheese, no cottage cheese, no regular yogurt, no LACTOSE-FREE cheese (unless it’s made with a non-dairy milk base). But that doesn’t mean I’m NOT lactose intolerant.

So I am stuck being the “know-it-all” in my design class. It’s an undergrad/graduate combined course (all of our GD classes are), and since my prof knows me, I get picked on (notice I didn’t say “called on”) a lot. I feel like a jerk.
