Brownie Cookie Dough Pie

November 26, 2012 by Amanda R DeWitt

Hello Friends!

Oh yes.

Combining two wonderful things into one magnificent creation.

Brownies + Cookie Dough = Death by Awesomeness.  Gotta love math, right?

Would you believe that this is a semi-healthy dessert?

It is!
I got the idea to make this from my friend Emily at our last baking day who is hosting a giveaway on the blog (Enter if you haven’t!  Drawing ends this week!).

I made this with my sister…okay she goofed around and I made it..for Thanksgiving this year.

Basically, you bake a brownie (from a mix or a recipe of your own…I did a mix!)  Then you add cookie dough topping that doesn’t have any eggs…salmonilla precaution or something.  😉

You know, my whole life I’ve been eating cookie dough with eggs in it and I’ve never gotten sick from it.  People who are getting crazy with fitness and “health” drink eggs raw, right?  So I don’t see the point of leaving the eggs out…but I digress.  This is what makes the cookie dough, dip or topping “safe.” The end.

Oat Cookie Dough Topping or Dip

Ingredients (12 servings)
  • 1 stick of melted unsalted butter
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1/4 cup light vanilla soy milk
  • 1/3 cup whole wheat flour
  • 1 and 1/4 cup oat flour (you can make your own with oats and a food processor)
  • 1 tsp almond extract
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda (for flavor)
Instructions
Whip sugars and butter together with a beater. Add milk.
In a separate bowl, whisk together dry ingredients.
Slowly and carefully add dry ingredients to wet ingredients.
Store leftovers in the fridge since there is milk and butter in the dip/topping!

You want to make sure to store this in the fridge since there is milk and butter in the dough.
