Apple Cider Cupcakes and Pumpkin Pie Shots

Hello Friends!

Happy Saturday!  I hope you all slept in or if you did not, I hope you got up early to do something awesome.  Such as running 10 miles.  Or baking a pie.  Or leaving for a tropical vacation.  Or whatever you define as awesome.  I made myself coffee, which usually seems too time consuming during the week.  Pumpkin blend with pumpkin pie creamer.  Pure awesomeness.

I am also taking a little time today to share my yummy (and easy!) fall cupcake recipe.


Last Friday I made about four dozen cupcakes while, um, Dave (the BF) rested.  [Sometimes I get jealous of his job because it works him so hard, he travels constantly, I hardly see him…but then I get to take super embarrassing pictures of him like this.  And it all works out. ;)]

I made some rainbow cupcakes for my sister’s baby shower that I put applesauce in instead of oil, so it gave me an idea for what to make for the Halloween party the following night.

Apple Cider Cupcakes!  {Print Recipe}
You start with a box of plain white cakemix and jazz it up to make the perfect fall treat.

Ingredients:

  • 1 box vanilla cupcake mix
  • water (according to the box)
  • 2 eggs
  • 1/4 cup applesauce
  • 3 TBS apple cider vinegar (check out this link for other great uses for ACV)
  • 1 tsp pumpkin spice
  • 2 tsp cinnamon
  • cinnamon sugar for garnishing

How To:
Whip the eggs and water into a froth.  Add applesauce.  In a separate bowl mix together try ingredients.  Pour dry ingredients into frothiness and mix up.  Bake according to the box (I did 350 for 19 minutes).

I had been thinking about what I wanted to be for Halloween for no less than a month and had come up with nada.  I suggested Dave and I go to a Halloween store, but apparently that’s not cool to do?  I personally don’t think I’m above going to pick out a fun costume, but Dave likes to think of something original.  And easy.

I came up with just the thing at the baby shower!  I would be the character that I’d been fascinated with over the summer and read a series about not once, but two times!!  (I had a lot of time while I was visiting Dave in nowhere Nebraska...)

The best part, Dave owns a bow-and-arrow.  Who was I?

Katniss!  And Dave was Peeta, of course.  (With a ball cap?)

I forgot to put that piece of hair in my face like Katniss does, but otherwise, dead on?

It wasn’t the hardest costume to throw together…except for Katniss’ hair!  I never noticed it in the movie, but her hair was basically in a backwards AND diagonal braid.  I only discovered this when I google searched Katniss to see what she was wearing.

Of course I spent about 30 minutes watching YouTube tutorials, perfecting this braid (while I should have been writing a paper) and barely got a picture of it.

Well you can see part of my hard work. 😉

Oh well.  We had a lot of fun (some of us too much fun) at Evan and Melissa’s anual Halloween party. 

My serious business look doesn’t work when people are making me laugh.

I even found a new favorite holiday shot.  Or really, my first ever favorite holiday shot.

3 Parts Kalhua
2 Parts Bailey’s
1 Part Goldschlauger

Shake in a shaker, but be careful to not get the shaker stuck.  Or to ask Dave for his help getting the cap off and then make fun of him for not being able to.  He might think it is hilarious to jam it on further…sorry Melissa!

Enjoy with friends!  Also be aware that Goldschlauger is a crazy alcohol that although it adds a delicious cinnamon spice to the creamy Kalhua and Bailey’s, it has a high alcohol content AND tiny flecks of gold that are apparently meant to make tiny cuts in the digestive system to get you drunker, quicker…if you believe that a company would actually do this to their drink. 😉

This Fall season is really wowing me.

Although it’s a little chilly here in Nebraska, I am ecstatic that my allergies aren’t bothering me and I can just enjoy all the festivities!  I carved a pumpkin by myself last night for the first time ever.  And sat outside for a good amount of time by a firepit, talking about life with old friends.  Nary a sniffle!

But I will tell you more about that later.  I also have the most gorgeous fall pictures to share.  AND a yummy fall french toast recipe made with leftovers from Dave’s prop bread.  But homework is a priority, right?  Dangit.

What’s your favorite thing to do on a Saturday morning?  

OR if you could do ANYTHING on a Saturday morning, what would it be?  I would sleep until my body woke itself, make some coffee and eat breakfast outside.  Then go for a long walk along the beach with my lover boy.  Because I would live on a beach in this scenario.  Perfection, right?

    Those cupcakes look SUPER yummy!

    I woke up EARLY and went to work for 9 hours (ew!) and then ran 5 miles. Now I’m crashing out the couch trying to stay awake until at least 8…ha! I lead such an exhilarating life! 😉

    Ooh! I’m being Katniss for our office party on Wednesday! I have hiking pants, tall boots and ordered the Mockingjay pin from Amazon for a couple dollars. Now if only I can get that darn braid to work as well as you did 🙂 Might have to see if a salon will do it for cheap!

      You can do it if I can with my short-ish choppy layers! You tube it and practice! Plus, it’s supposed to be messy. 🙂
