I hope you are all having a great week! I am recovering from my crazy cold. Today my nose has been running like a faucet…along with the little kiddos’ noses! At least I know what they’re going through right??
I am out of classes for the summer… in case I haven’t mentioned it!! Woohoo! I am working more at my coffee catering job as well as my fun babysitting job, but I am also enjoying my days off.
Sleeping in, doing blog stuff, baking, watching Food Network, and some cleaning projects (um yea need to start on those).

Today is simply a group of photos I’ve taken to make up a typical day of eats at home from last week. Sometimes I start taking pictures for the day and forget…and others I just think my food looks really pretty. (Times are approximate.)
I also want to mention this would be on a non-working out day…so I don’t need as much fuel on those days.
I hope you can get some ideas for semi-healthy meals, snacks and treats!
{Breakfast} 8am: Creamy peanutbutter and granola over whole wheat toast.
I used up the last of my custom Blend mix last week and am super sad! It was a combination of honey, chia seeds and almonds. So delicious and satisfying!
Lunch {12pm}: When I’m just hanging out at home (and not working out) I don’t usually snack in the morning until lunch. Plus I usually drag breakfast out awhile and work on my laptop so I’m not even hungry until noon.
A delicious lunch item I had last week was a grilled chicken salad over spinach and cottage cheese with some garden fennel veggie crisps I got when I was in Boulder at the farmer’s market.
{Snack}3pm: I have a new chip obsession. I actually bought two bags at the store last time…and didn’t have anywhere to put the second bag.
They are part of the Tostitos Artisan Recipes. Roasted Garlic and Black Bean. So crispy and flavorful and there are real beans in the chips!
I won’t pretend they are super healthy…however pairing them with salsa and or cottage cheese makes them more satisfying. I also make it a point to put them in a small bowl and not eat directly out of the bag.
{Dinner} 7pm: I made some yummy tai food last week and am still enjoying the leftovers.
Tai noodles, sauce, grilled chicken, egg, peas and some spinach. Oh and some red pepper flakes!
{Dessert} I try to eat dessert right after my meal. Dessert as of this past week has mostly been my Banana Chocolate Chip Confetti Bars.
Sunday I had it with FroYo that the BF brought me since my throat was so sore.
I will also usually have a late-night snack if I am hungry. A yummy snack as of late is a Semi-Healthy Oatcake with melted peanutbutter.
I’ve also been having these for breakfast and lunch. I’ll add some chocolate chips to the melted nutbutter if I feel like it too. Yum.
