I got home Friday around 2pm. Famished.
I had just finished with class and driving all around campus trying to find my advisor’s office. (Yea..I am super bad with directions and I have only been to her office once about a year ago.)
I was feeling a bit stressed, trying, as usual, to figure out what to do with my life.
The appointment was to discuss the possibility of making my degree a double-major: Nutrition, Exercise and Health Sciences (NEHS) and Dietetics. Well, it turns out I’m a little too late to begin on that journey as it will take me another 4 years to get through a double major.
That left me to decide whether I wanted to keep the NEHS degree or go for Dietetics instead.
Do I like nutrition more and want to be a dietician or work more in the fitness industry?
All the debating got me hungry. The fact that it was 2pm and I hadn’t had lunch may have had a hand in that.
I had some turkey sausage I needed to use and thought I should whip up a pasta dish to prepare for my 9-miler on Saturday.
I also knew I needed more veggies in my life and decided I should add some bright, colorful edamame.
Just seeing these photos is making me crave sushi. Sushi date anyone?
Turkey Sausage Pasta with Edamame {Print Recipe}
Ingredients:
- 1 pound turkey sausage
- 1 can red pepper alfredo sauce
- 1 bag edamame
- red pepper flakes
- whole wheat shell pasta
How To:
- Cook edamame according to package. Drain and let cool.
- Brown turkey sausage. Drain. Add alfredo sauce and red pepper flakes to taste.
- Start boiling shell pasta according to package.
- While pasta is boiling, shell the edamame and add to turkey and alfredo mixture. You can save some to garnish on top.
- Drain pasta. Mix all together and enjoy this easy creation!
The texture and flavor is amazing! Sometimes the edamame get stuck in the shells and it makes it even more delightful. Spicy and creamy and yummy. AND semi-healthy!
