{WIAW #24} Need Mo Veggies

Hello Friends!

Have you ever wondered what I eat every day?  It’s okay if you haven’t….

If you are, however, looking for some quick food ideas and/or a yummy granola bar recipe, this is the post for you.

Check out my WIAW {What. I. Ate. Wednesday.} today as well as my previous posts (also click the link to see why I participate in WIAW and what it’s all about).

Ideas for what to eat on a daily basis from a semi-health nut! Breakfast, lunch and dinner. Peanut butter toast, waffles and eggs, drippy peanut butter sauce, fruits and nuts granola bar, taco salad, salsa ranch.

Warning: This day did not contain crazy amounts of fruits and veggies.  I know, I’m disappointed as well, however I have been out of town A LOT (I am currently blogging from a hotel room) and had limited fresh food.  If it makes you feel better, I brought carrots and apples on this trip. 😉


{Breakfast:} The usual and satisfying peanutbutter on whole wheat toast with grandma jelly.  As well as coffee, as I was planning a run.

Is it weird that sometimes I get excited to wake up so I can have my yummy breakfast?

{Lunch:} A new favorite meal.  Two scrambled eggs (microwaved. yes, microwaved.) with two Kashi whole grain waffles, the blueberry version.

Lunch: waffles, microwaved egg puff, drippy peanut buter sauce and coffee.

Instead of regular syrup, I actually made a peanutbutter syrup.

Home made drippy peanut butter syrup.

Peanutbutter syrup (1 serving):
1 TBS creamy peanutbutter
1 tsp brown sugar, 1tsp water
tiny splash of maple flavoring

Home made drippy peanut butter syrup with waffles and eggs.

It was delicious, but lacking in fruits and veggies.  I could have added veggies to the eggs and added a piece of fruit.  Or do the blueberries in the waffles count…?

{Snack}: Freshly baked Fruits ‘n Nuts granola bar with some diet dew.

My sis got me a sweet (and pink) insulated cup for my birthday.  How did she know??

{Early Dinner:} Taco-ish salad.

Only had half of those chips..although they are mighty delicious

Fresh baby romaine (yummy!), chicken tenders, whole grain scoops and salsa-ranch.

Salsa + ranch = Salsa-ranch 🙂

{After-work snacks:} The rest of the chips (from the bowl above…not the rest from the bag) + cottage cheese.  And half of another Fruit ‘n Grain granola bar.  So. Good.

Time for some studying!

Really depressing material for Nutrition…all of the bad diseases that come along with inactivity and unhealthy eating.  Scary, but a good reminder to treat our bodies right!
