I hope everyone is having a great week so far!
I cannot believe it’s Wednesday but I am so excited because I missed out on WIAW last week due to crazy stress and busyness. (More info on WIAW.)
The food pictured was from a couple of weeks ago when I made my yummy crockpot chili. I prepared it in the morning and was home all day doing homework and drooling over the smell. I finally got to enjoy it with the BF and Daddio after a hard Body Pump workout. So. Good.

WIAW {What. I. Ate. Wednesday.}
{Breakfast}: Homemade oatcakes with melted crunchy peanutbutter and homemade syrup
{Lunch}: A go-to meal for me: Spinach salad with whole wheat breaded chicken tenders, cottage cheese, and jal-jack cheese melted on the tenders with a side of parmesan garlic sauce. Mmm..
{Dessert}: PB2 cookie dough ball (recipe to come!) I’m pretty sure I had a couple of baked ones as well!
{Pre-workout snack}: Half a bowl of Special K (the other half came after Body Pump)
{Dinner}: After smelling this delightful crockpot chili all day…I finally had a bowl (or two)!
It was so worth the wait!
{Dessert}: Working on getting fruit in my life so I took some leftover frozen yogurt + soy milk + frozen berries and made a berry-licious dessert!
Food Evaluation:
- Started out right with a filling breakfast.
- I don’t remember the times for my meals, but it seems like it was good spacing.
- I’m happy I got some fruit in my life!
- Making the chili myself made it even more satisfying..not to mention the fact that chili has so many healthy veggies, beans and protein!
- Probably ate more cookie dough/cookies than I should have. ((Must work on this.))
