Diary of a Semi-Health Nut

ramblings + recipes of a semi-healthy nut

Hi! I’m Amanda.

I’m a writer, chocolate chip cookie baker, blog designer, power walker, Instagram fiend, peanut butter toast lover and copious coffee drinker living in Nebraska with my husband and three cats. (also a fan of a good run-on sentence)

My new fav breakfast :-)

June 30, 2010 by Amanda R DeWitt

Hello everyone!  I just wanted to share a delicious AND healthy breakfast choice.  It is similar to an Egg McMuffin, only you can make it at home and save a few calories!

Ingredients:
2 eggs
Oroweat Sandwich Thins
Mexican Shredded Cheese
As silly as it sounds, I microwave the eggs!  I beat the eggs in a small microwaveable bowl and microwave for 45 seconds covered.  Then I add some mixed cheese on top and microwave another 20 seconds.  I toast the sandwich flats in a toaster oven for about 5 minutes (you may have to play around with this).  I take the eggs with cheese out and put it between the sandwich flats and voila!
Nutrition info
Calories: 265
Fat: 11g
Sodium: 405mg
Protein: 18.5
Fiber: 5g
Sugar: 2g

Plus vitamins A, E, and B vitamins from the health-eggs and nutrients from the whole wheat flats!

Compare to McMuffin:
Calories: 300
Fat: 12g
Sodium: 820
Protein: 18g
Fiber: 2g
Sugar: 3g

Okay, the Egg McMuffin looks good…and its fine if you can’t get anything else….but just try this recipe!  And you can use the flats for any kind of sandwich or burger for only 100 calories of whole wheat goodness!
Thanks for stopping by and let me know how it tastes!
