Ingredients
Muffin (Dry Ingredients):
1 + 1/2 cup oat flour*
1/2 cup sugar**
1/2 cup oats
2 tsp baking powder
1/4 tsp allspice
1/2 tsp baking powder
1/2 tsp sea salt
Muffin (Wet Ingredients):
1/2 cup peanut butter
2 TBS butter
2 eggs
1/2 cup pumpkin puree
1/2 cup almond milk
2 tsp vanilla extract
Streusel:
1/4 cup oats
1/4 cup oat flour
1/4 cup slivered almonds
2 TBS melted butter
2 TBS sugar**
1/4 tsp pumpkin spice
*process or blend oats until they become the consistency of flour to make oat flour
**I used turbinado sugar for funsies
How To:
For the muffin:
Melt peanut butter, pumpkin, butter, and vanilla in a microwave safe bowl for 30 seconds. Stir together and continue microwaving in 15 second intervals until creamy. (should only take a couple of minutes) Let cool for about 5 minutes while you whip up the rest of the ingredients. (if it’s too hot and you add it to the mixture with eggs, things could get weird. think scrambled eggs.)
In a separate bowl, whisk together all dry ingredients.
In a third bowl (I apologize ahead of time for all the dishes), whip together milk and eggs until fluffy. Add to dry ingredients along with the peanut butter/pumpkin/vanilla mixture. Stir together until just mixed.
Portion out batter into 12 muffin liners. Add streusel on top.
Bake 18-20 minutes at 375 degrees F.
For streusel:
Stir together ingredients until just mixed. Portion out over muffins before baking.

So you should definitely make a batch of these ASAP for breakfasts, running fuel and delicious snacks this week.
