These delightfully flavorful, moist, spiced and filling pumpkin muffins fueled me through a brutal 7 mile run on Saturday. (<-did anyone notice the excessive alliteration there with the letter “f”?)
Fall allergies + cold + wind = exhausted Amanda. Does anyone else have fall allergies? I would like to virtually hug you and tell you I feel you. It stinks. Seriously.
But for some reason I signed up for a half-marathon in the fall and I only have two weeks left of training…so I downed a pumpkin muffin, put on my big girl pants, my Gilmore Guys podcast (anyone?) and got it done.
These peanut butter oat pumpkin muffins also make an amazingly quick breakfast to grab on the way to work. Or if you’re me, to have as a second breakfast after a morning coffee catering event. Like a little treat for all of my hard work.
Speaking of coffee, these streusel topped babies are amazing with a hot cup of joe.
This was actually my first time making streusel. Another one of those things that is stupid easy, but I’ve just never attempted it. All that’s in this spiced streusel is oats, butter, sugar and pumpkin spice. So simple but it really adds a layer of decadence to the muffins. Like baked cinnamon sugar oat crumble. It’s also a perfect compliment to the moist pumpkin spiced muffin with a subtle peanut butter flavor.
