This homemade honey roasted almond butter is slightly honey sweet and dreamy creamy goodness on your morning toast.
I’m pretty sure this stuff disappeared in 4 days flat. And Dave barely had a taste of it…it was just this nut butter monster slathering it on toast, tortillas, a cookie (ohmigosh)…really anything.
Funny note: Dave giggles every time I say “nut butter.”
If you have never tried homemade nut butter, you need to get on that.
You can customize the flavors so it suits you instead of buying a jar of it at the store. It only takes a few minutes of processing (even though it might SEEM like forever in comparison to, say, a smoothie) and then you have a delicious jar of buttery goodness that you know exactly what went into it.
Tips for making homemade Almond butter:
..or any homemade nut butter, really.
1. Make sure the nuts are roasted. When the nuts are roasted, they release their oils which makes it tons easier to whip them up into nut butter. It’s also thought that nuts should be roasted to kill any potential toxins, but that’s another debatable story. It is possible to make raw nut butter, it’s just a pain in the butt and requires a lot of patience.
2. If in doubt, keep blending. That’s pretty self-explanatory, but basically, as long as the contents are still chunky, you need to keep on keeping on.
3. You will probably have to add some oil. I know it seems like that defeats the purpose of making your own nut butter, but just trust me, it makes the whole process a lot easier. Or maybe my food processor sucks?
4. You need a food processor. A blender (at least a basic blender) will not do the same thing. [check out the differences between blenders and food processors here]

Foodie Photography Fun
These photos are all taken with my new Nikon D5300 which I’m having a lot of fun learning about all of the features. Truthfully, Dave is teaching me way more than I already knew because he got my old camera and has been researching the crap out of photography-related things. It’s super helpful because if you have a fancy camera, you may as well know how to use it!
The thing is that now I take a bazillion pictures and like A LOT of them, so I took to Facebook and Instagram to see what my friends thought of some of the photos I was trying to narrow down. I got A LOT of feedback on my personal Facebook which allowed me to pick the best of the drippy nut butter photos (see above).
I’m also a part of a foodie photography group on Facebook and got some incredibly helpful feedback. I don’t agree with all of it or implement it of course because I want to have my own style (and I like my pretty spatula and will keep using it, thank you very much), but it’s still good to get a feel for what is pleasing to most people’s eyeballs and WHY.
Homemade Honey Roasted Almond Butter Recipe
This recipe is pretty simple, but maybe for the sheer deliciousness that is almonds and honey…it will knock your socks off. You could whip up a double batch of this and have it on your breakfast all week long!

So the “news” part.
We are moving back to Nebraska!
Let me back up a minute.
You may or may not have noticed that Mr. Dave is involved in stuff around the blog wayyy more often now. Not that there are more photos of him—heaven forbid I take a photo of him—but like I mentioned in today’s post, he helped me out with some photography stuff.
We’ve also been able to travel back to Nebraska together (that didn’t used to happen super often) AND this time around in Nebraska, we are staying three weeks and going to Colorado in the middle. Together. Both of us.
Whelp, Dave quit his job about a month ago.
It was a little out of the blue and a little inspired by certain events happening at work, but after four years of working on the railroad and giving his heart and soul to his work…he’d had enough.
I’m not gonna lie. I didn’t see this coming.
I mean we had talked about him looking for jobs in Nebraska, but I never expected him to quit before he had another job.
Dave tends to stick things out. I mean he lived out of hotels for the first two years of his job. He’s put in his blood, sweat and tears (literally), and has stuck around.
But when you’re working 60-80 hours a week, weekends, nights, with a cellphone glued to your side, ringing at all hours of the night (this gal here didn’t appreciate that one bit)…something is bound to break.
His health had been slowly deteriorating as well. They had a nurse give them check-ups (because clearly no one had time to go to the doctor themselves) and he consistently had high blood pressure and was borderline diabetic and borderline hypertensive. No bueno.
So now he has had some time to relax, sleep a normal amount of hours, eat normal food (not gas station food—blech), and has even started working out again. I’m also super excited about our trip to Colorado together and the fact that he isn’t working every single holiday!
We even got to do some sightseeing around the city we’ve lived in almost two years! For example..checking out Minnehaha Falls which is literally less than a mile from my work. Not that I couldn’t have gone without Dave…it’s just a little more fun to explore new places with your bff. (and everyone that lives there has been there, done that)
I will definitely be sad to say goodbye to all of my Minnesota friends and to this chapter of our life, but I know it will be for the best. And I’m hoping we can come back and visit, too!
Like I said, we are back in Nebraska now and looking for houses and should be moving back within the next couple of months. Except this time we won’t be moved by Dave’s company for free. Boo.
So there you have it. Nut butter, foodie photography and moving back to Nebraska. Pretty much sums up my life right now.

I”ve never made nut butter. Now that I see how easy it is, I have no idea why I haven’t. It looks delicious.
I moved 1700 miles away from my family two months ago. I don’t expect to visit them more than once a year, but honestly, I’m okay with that. They added a lot of stress to my life that isn’t there as much now, and I absolutely love the Pacific Northwest. I was not meant to live anywhere else – I’m sure of it.
Moving sucks for sure, but it sounds like you two are a lot happier for it.

Yes, it really is simple but involves a little patience. If you have a bigger food processor, you can probably start it and walk away but mine is tiny and I have to sit and hold the button haha.
Wow, that’s a big move! It is true that being around family there is more responsibility and sometimes it’s nice to say, “I can’t make it..I’m in another state.” haha, but I think it will be a good thing overall. 🙂 I’m glad your move away was a good thing. Visiting home is definitely more special when you don’t get to see everyone very often.
