You guys, this recipe is so easy. And it’s so tasty. I think Dave wanted to punch me with how much I was fawning over these little pieces of heaven. Mini Chicken Pesto Pizzas, I love you.
I think I used that “little pieces of heaven” in my Lemon Snickerdoodle Funfetti Cookies post…I guess I’m just a little zealous over certain recipes!
So have you noticed that I’ve tried to follow somewhat of a posting schedule? No? Maybe because it only lasted two weeks ha!
Here’s what I’m trying: Mondays, Wednesdays and Thursdays at 8am CST.
This week of course is funky because I was out of town/traveling/broke my blog on Monday (thanks Accelerated WP for helping me fix it ). Then last week I posted on a Friday for Did You Know Fridays and then there will be the occasional Caturday post…like this Saturday.
So. I’m working on the consistency thing. No guarantees. (Remember how I’m not perfect?)

I’m also still apparently working on this photography thing. I might be able to blame Zoey Fluffy Butt because she was all up in my pesto, but really…I had some weird angles in the 20+ photos I took. (These are on my old camera too…brace yourself for the new Nikon D5300 photos…coming soon!)
Unless there’s a fluffy cat trying to lick my food.
One thing I learned during this experience is that my cat likes pesto.
Have you ever tried to take foodie photos with a pet nearby? It’s near impossible. Zoey definitely liked that knife. Don’t worry, we didn’t use it after she licked it.
These simple, yet elegant, yet finger-licking-good pesto chicken pizzas came about after our little blogger trip to Costco.
Emily, one of my Did You Know Fridays co-hosts, absolutely raved over this Kirkland basil pesto from Costco. So much so that we all ended up buying a jar. She said she makes these mini pizzas on English muffins all the time. And guess what was on sale at Costco? English muffins. It was like the stars aligned in favor of a new easy favorite dinner.

Brief pause while I run to the kitchen to make more pesto chicken pizzas. Blogging on an empty stomach is never a good idea, friends. The more you know…
I do want to attempt my own pesto making adventure at some point, though. We make it at the café, so I could always swipe the recipe, but sometimes I am lazy. Err…have other priorities?
I think if Zoey approves of the pesto…you should try it.
Mini Chicken Pesto Pizza Recipe
Ingredients:
two English muffins, sliced in half
two chicken breasts, cooked and diced
4 TBS basil pesto*
red and green bell peppers, diced
shredded mozzarella
Directions:
Spread 1TBS pesto on each sliced English muffin.
Layer 1/2 of each chicken breast (diced) on each slice. Add peppers on top and cheese on top of that.
Place in toaster oven at 400 degrees F for about 5 minutes or until the cheese is melted. Dive in and enjoy!
*I used the Kirkland pesto found at Costco’s because it was fervently recommended to me.
