These adorable little frittatas are the perfect dish to prepare ahead of time for a week’s worth of healthy breakfast on-the-go! Super customizable too!
A couple of weeks ago I was apparently feeling very brunchy.
I created the Berry Swirl Oat Bread (which FYI is ah-mazing toasted with peanut butter for breakfast!) and I also whipped up a couple dozen of these cute mini frittatas!
I’ve been trying to do a little meal prep each week. I see so many bloggers posting their Sunday prep day pictures and I keep vowing I’m going to buckle down and do it myself.
And I have been doing it…my version of it at least.
Since it’s just me and Dave, I really only have to make a couple of big batches of food and we’re good for the week.
We eat the leftovers throughout the week, Dave often gets treated to lunch at work, I eat tons at the café (and occasionally get to bring home “expired” food for free..woot!), and sometimes we just feel like cereal for dinner. Then there is the dining out on the weekends— especially when we have people in town or are out of town ourselves– it seems to work out!
I’m pretty sure we go to Pizza Luce every time we have friends in town..including this past weekend where we visited the Minneapolis restaurant for the first time (we usually go to the St Paul one).
We also frequently hit up Obb’s since it is a super chill bar and grill type of place that’s only in St Paul. It’s also a place where a lot of older people go…oh well. Those older peeps know good food!
Anywho…these mini frittatas are perfect for one of the batch meals I make!
You can make these at the beginning of the week and have healthy breakfasts, throw in a lunch box, brinners or healthy snacks throughout the week. The best part is that you can even easily nuke them and eat them on the run. Not that we do this of course…we always take plenty of time to sit down, drink our coffee, read the paper and have a full breakfast before we leave the apartment at 5:30am. Can you sense the sarcasm?

I batch “prep” for the week, bake potatoes,make granola, slice and dice veggies, and now that it’s cold I usually make a crockpot of soup. This way I have stuff ready to cook when I get home after work OR something I can throw in the microwave and eat NOW if I get home late due to yoga or meetings.
I love these little things! I always called them egg and _____ muffins, but I’m totally going to start calling them frittatas now, so fancy 😉

Yes..we are fancy over here! 😉 I was going to call them egg bakes and then “frittata” popped into my head and the rest was history.

I made a batch of these several months back and they were GREAT. What I love is that you can customize the ingredients – I used some bacon and tomatoes in some, some sausage and green onion in others. I froze a portion of the batch and they were perfect when heated up in a small covered nonstick pan with a few drops of oil. In fact, the process of reheating them this way also crisped up the potatoes on the bottom. Delicious! I just bought some more ingredients to make another batch this week. Well done!
