Berry Swirl Oatmeal Bread with Whipped Goat Cheese
The sweet and tart berries swirled with the goodness of oatmeal bread and topped with a decadently whipped goat cheese spread is the perfect way to start your morning. It also makes a great snack or an even better treat to take to a brunch.
You did know it was National Oatmeal Day…right? Okay I know there are a lot of holidays out there, but oatmeal is a pretty important food in the healthy living blog community. I’ve heard numerous bloggers say they eat oatmeal for breakfast on a daily basis. That’s not really me…
I tend to eat peanut butter toast on the daily. BUT sometimes it’s on oatmeal bread I buy from the store.
Since the lovely people at Driscoll’s gave me the challenge of creating a recipe involving berries and oats..I thought I might try to make my own oatmeal bread. With an awesome twist of course.

Yes, the twist is awesome. You might call it weird, but just trust me—you must try this Berry Swirl Oatmeal Bread with Whipped Goat Cheese.
This unique combination may have you scratching your head, but I promise, there is logic to it!
After tossing the idea of oatmeal bread around and letting it marinate in my head, I decided a strawberry oatmeal bread would be the way to go for National Oatmeal Day. I also wanted it to be pretty, so I thought about how we puree our berries at work and thought it might be cool to try to swirl the berries throughout the bread.
Then when I was at Whole Foods, I saw some goat cheese and it made me think of a strawberry and goat cheese salad. Or is it strawberry and feta that’s more common? Either way I was determined to throw all of that into my oatmeal bread.
Only I totally spaced and forgot to put the goat cheese in the bread before I threw it in the oven.
I was so upset at myself because I had just talked to a coworker for a whole 20 minutes debating if it was weird or not and how to make the berry swirls in the bread. I was so excited to see if I could make the berry goat cheese oatmeal bread work for National Oatmeal Day.
Then I thought..maybe I could make it into a spread of some sort. I had heard of whipping up coconut oil and wondered if goat cheese could be the same. It would need something extra though. I had a can of whipped topping in the fridge and a eureka moment happened. Berries pair perfectly with whipped cream, right? Why not mix goat cheese and whipped cream?
Thus Whipped Goat Cheese Recipe was born.
Seriously..why not?

I think the bread turned out pretty, yes? It was a little tough to do the swirl, but the thing is…it doesn’t have to be perfect.

Fun facts about how awesome oatmeal is:
Oatmeal is a soluble fiber which helps lower cholesterol.
Soluble fiber also helps you feel full as well as aids with digestion.
Oatmeal is also extremely versatile and can be used in anything from your morning bowl of hot oats to desserts to delicious berry breads to meatloaf.
Types of oatmeal:
I used two types of oatmeal in my bread:
1. Sprouted oat flour: sprouted grains have more nutrients and the flour just means it was grinded down to a flour consistency.
2. Old fashioned rolled oats: these are oats that have been steamed and rolled into flakes thicker than instant oats.
Make sure you pay attention to the type of oat called for in the recipe. To make your own oat flour, simply take some oats and put in a food processor until you achieve a flour-like consistency.
Fun facts about how awesome berries are:
Berries are packed with antioxidants which basically battle free radicals in the body caused by any number of things such as pollution, sun damage and natural processes in the body. Free radicals can cause cancer so essentially berries help fight off cancer and other diseases. Woot!
They can also be frozen to use later in delicious smoothies.

Love this. I usually sleep in until the very last possible minute, and therefore end up having a less than optimal breakfast. I love when I do have time for oatmeal… having it in loaf form is a great idea!

I LOVE whipped goats cheese! I used to eat it on toast with a drizzle of honey and some lemon sea salt. Need to do that again… but on this tasty berry bread!
