I mean with so many yummy ingredients…how do you pick the stars that get to stay in the title? I mean I left out the maple because it wasn’t quite a star ingredient. It does make it super yummy and decadent though…
Then there is the fact that it has so much protein. Protein in a muffin is pretty sweet….so is brown sugar….

So remember when I did the Bacon Chase 2014 in Minneapolis? There were actually some funny pictures of Alex and I crossing the finish line…we may have pointed at the camera man and waved a bunch so he took 10 pictures…
It also looks like I’m being a huge jerk and cutting off Alex in some of the photos. What can I say..I wanted to get the bacon!! 😉
And remember how I ended up carrying a bag because I didn’t think we would run at all? Well, that bag came in super handy with carrying things from people (just call me mom) AND for taking home extra bacon bits!
I was initially going to throw some of the bits onto a salad at Alex‘s suggestion, but…that didn’t quite happen.
I saw these muffins on Kim’s blog and knew I wanted to make them with a few twists.
Including bacon bits.
And some chopped up almonds from Blue Diamond. Almonds make the best banana nut muffins.
Banana Nut Muffins with Bacon and Chocolate Chips
These bad boys are perfect for a quick breakfast or snack and would be amazing with a brunch-y get together with friends!
Seriously, how impressed would they be that these muffins are actually healthy? They are made with Kodiak Cakes Power Cakes pancake mix (which is uber healthy), bananas, almonds, bacon, chocolate (bacon and chocolate are definitely healthy. protein. antioxidants. done.) with some brown sugar and maple to sweeten the deal!
These banana nut muffins will be super duper moist (gah. that word.), lightly sweet and smoky…and pretty to look at. Especially if you use colorful muffin liners like I did. You gotta love that crunch you get from the almonds. I am a sucker for texture!
I inhaled about 3 of these right out of the oven and Dave polished off most of them the next couple of days. I’d call them winners.

I really cannot believe the calorie count is that great on these. I guess you hear bacon and you think grease and fat. But a little can go a long way in the taste department. Sounds awesome. My husband would LOVE these!!

Yes! It has a base of kodiak cakes and the bacon bits are really just an add-in! You’re so right a little goes a long way! These are totally hubby and kid friendly (same thing, right?? 😉 ).

Thanks, but it was actually Kim’s idea from Hungry Healthy Girl! I loved using Kodiak Cakes as a base because it’s uber healthy and then you can add in some semi-healthy ingredients.
