After taking that time off of blogging to studystudystudy for the NASM personal training test…I now have so much I want to post about that I am completely overwhelmed. I just didn’t know where to start.
So obviously I instead decided to make a workout for the Walking Dead marathon/finale Sunday. It’s a fun one too if you are a fan of the show. I will definitely be busting it out again this week.
I have opened the cafe two days in a row so far (meaning 4am wake-up time…and have another two days to go…you might want to disregard anything I say on Thursday as I will surely be in zombie mode–get it..zombie..). Both days so far I almost completed my 10k fitbit steps before even leaving! (10k steps is the goal for the day according to fitbit) Busy busy!
Monday morning I sleepily stumble into the cafe (I mean I had to watch The Walking Dead finale the previous night…and some of the Talking Dead because OMG THAT EPISODE) and see a note from the assistant manager. It tells me the other openers’ shift was traded with a new person and then listed the (limited) things he knows how to do.
I knew it was going to be a fun day.
If anyone else has worked at a small cafe or restaurant..you know you have to be able to do everything. And with the speed of a cheetah. That is chasing food…or something.
We get unexpected “rushes” as they are called where we will be dead for an hour and then 5-10 customers will come in. This isn’t a huge deal for two experienced workers to handle, but you see when you have a new person involved…they tend to have questions. A lot of questions. It’s a little hard to be back in the kitchen whipping up food and be answering questions about ringing up orders with a line full of customers staring at me.
On top of that, the last 3 days of the month the sales team at the gym has an open tab…meaning we do tons of cafe sales because all of the food and drinks for the sales staff are paid for by the company. The cherry on top is that the sales staff always have confusing orders for a new person.
So…yeah. Busy busy. Didn’t mean to go on a rant…but it happens, right? That’s the beauty of having a blog!
It’s all good though because I love helping people. I still remember what it was like to be new and have certain veteran employees looking at me like I was an idiot because I didn’t know how to do my new job…because I was new. Not stupid. Just new. It’s good to remember what it was like.
Besides crashing on the couch when I got home (and falling into a hole in the internets yesterday when I should have been sleeping)…I also edited some pretty cookie photos!
Remember that time I lost all of the photos because my laptop ate them and I cried? (drama alert!) Well, they are still hidden in the depths of my unforgiving laptop’s belly, but it’s okay. I took most of those cookies featured in the lost photo shoot to Nebraska a couple of weeks ago to celebrate birthdays (mine which is coming up on April 7th and my sisters on March 15th…gah I have yet to recap that trip) but had some of the cookies hidden in the freezer..so I did a re-shoot!
These almond cookies made my taste-buds and tummy happy. You definitely have to like almonds (and judging from my walnuts post A LOT of you love them!). I used almond flour, almond extract and some chopped up almonds for a relatively protein-packed cookie! I also added some chocolate shavings because..chocolate.
So I am proud of these photos, but I say that with some apprehension. Every time I’ve been beaming-proud about foodie photos I either get rejected from a foodie photo site OR see something like Lee’s smoothie post. I mean…are you kidding me?? I am serious when I say I could hang those pictures on my wall and stare at them, taking in their beauty. Food truly can be art.
Maybe for my birthday on Monday Lee will frame those photos for me?
And with that, it’s time for me to collapse into bed. 4am sneaks up every dang time!

What is your favorite flour to bake with? (no, not healthiest, your FAVORITE) I like the almond flour taste and texture, but am liking the all-purpose whole wheat white flour (did you know sometimes they use coloring to make flour look brown and healthy?? seriously food companies…)
If you could live anywhere in the world…where would it be? I think I would live in Nebraska with the family BUT travel once a month somewhere new and/or to hang out with long-distance friends (if we are talking hypothetical and what we REALLY want to do..)!!
Also do me a favor and let me know if my site is slower today! I added some new things and might need to edit some more…

Your almond delight cookies look great; recipe says to add almonds and chocolate, but it does not have the almonds & choolate in the ingredients… let me know what kind of each & how much.
