Regardless of how the weather is acting, spring is coming. I can feel it in my bones – albeit my very cold bones 😉 With spring comes warmer temperatures, rain showers, longer days and little bits of green popping up all over the place.
The color green always reminds me of spring – green tree buds, green grass, green crocuses poking up through the ground and green beer… wait, that last one is for a different spring event 😉
Since spring is right around the corner, I thought I’d share a recipe that makes me think of my favorite spring “holiday,” St. Patrick’s Day!
My St. Patrick’s Day Chocolate-Mint Mug Cookie is light and fluffy – the perfect type of cookie to enjoy heading into spring. But have no fear, this mug cookie also has decadently rich chocolate and mint flavors making it perfect to satisfy your cookie craving.
St. Patrick’s Day Chocolate-Mint Mug Cookie
Makes 1 cookie
Ingredients:
- ½ cup unsweetened applesauce
- 1 packet stevia
- ½ tsp baking soda
- 2 TBSP coconut flour
- 1 heaping TBSP cocoa powder
- 1 TBSP milk (I used almond milk)
- Mint-Dark Chocolate M&M’s
Directions:
Combine all ingredients (except M&M’s) and mix well. It takes some muscles to get the coconut flour mixed in completely! Press the M&M’s onto the top of the cookie – use as many as you like! – and cook in microwave for 45 seconds. Allow to cool for a few seconds before enjoying.
You’ll have to forgive my photography – I made this delicious mug cookie on a Saturday evening and may have eaten all of the extra M&M’s (because there is no such thing as leftover M&M’s!) so I couldn’t recreate for better daylight hour photos 🙂 But thankfully we all know that cookies are always delicious regardless of how they look!
I may have played around (and had too much fun) with the photos to brighten the mug cookies up a bit. I just can’t stay away from PicMonkey!! Also, who can blame Becky for eating the rest of the M+Ms??

Yum! I love chocolate mint and I love mug cakes. Win win! I started baking with coconut flour about 6 months ago after going gluten free and now I use it more often than any other.

Not a lot of coconut flour specific recipes. Mostly I substitute for any other flour and so far I like the texture better and the recipe turns out lighter. I also like to use almond flour.
