So, how was your Valentine’s Day?
You know, that day where you force your man (or woman) to buy you a card and flowers in the name of love?
Of course I’m being facetious. Dave and I didn’t celebrate in the traditional sense, but there was a meal shared, chocolates, flowers and cards.
The meal we shared was at the cafe I work at; I in my messy work clothes after making food all day and Dave in his car-fixing gear.
The chocolates involved were from me to Dave in a Star Wars tin. I’m fairly confident Dave knew I had enough chocolate in my chocolate drawer.
The flowers were not red roses, but actually flowers I love: carnations. I adore the colors and how fluffy they are PLUS they don’t die after two days. Dave knows me too well and got me a ginormous bunch of pink ones.
The cards exchanged both had baby animals on them.
After our romantic dinner and gift exchange, we watched a couple of episodes of Impractical Jokers, almost died of laughter and ended the evening in separate rooms. I waited for my cold medicine to kick in (did I mention I came down with a crappy cold? yeah colds stink) while watching The Walking Dead and Dave retired to the bedroom to watch Gilmore Girls. Seriously.
I know you are all jealous. (See this post for more confessions slash reasons why I am a little nutty.)
While you may not be able to replicate the utterly romantic evening we spent together, you can recreate the delicious power bites I made for Valentine’s Day.
These were born out of a lack of eggs and laziness. I was planning on having another try at breakfast cookie experimentation when I realized I was out of eggs. In came the chia gel substitution.
Then after rolling them into balls and sticking them in the fridge for an hour, I realized I didn’t even have to bake them. There was no eggs or milk involved, so these little power bites would actually stay good on their own.
With power bites, you basically get to eat semi-healthy cookie dough. Cookie dough without raw eggs that will supposedly kill you (okay yes, salmonella, kids, don’t eat raw eggs! adults…weigh the benefit with the risk…or make these balls!) They are useful as a pre or post-workout meal as well as a yummy treat.
Seriously…try not to eat these all in one sitting. Dave and I only manage to keep these around a couple of days or so. I blame him, but he blames me…we might have to install a video camera in the fridge!

I would also like to give Dave and myself a little Valentine’s credit since we actually didn’t intend to celebrate until March 1st watching The Little Mermaid musical at a twin cities dinner theatre! (Dangit that still doesn’t sound romantic does it…oh well. The love is there and that’s all that matters, right? 😉 )

Would you call these things balls or bites? I mean it got a good rise out of the Instagram crowd (#balls), but what if your mom, dad and boyfriend’s mom all read your blog…? (#awkward)
