Good morning friends! I am feeling so inspired by the lovely gals doing the Love Challenge with me! (It’s not too late to join!) I actually did quite a few things yesterday that I might not have normally done. Intentionally doing nice things for others and for yourself can make quite the positive impact on your mood! I even think being kind to those around you can be more of a benefit to you than to them! How can you not smile when you make someone else smile??
But you are probably here for the food! It’s been awhile since I’ve done a round-up of my eats (or a full day of eats…that one is tricky…I mean remembering to take pictures of every morsal that passes through your lips is a challenge).
The purpose of this type of post is pretty simple:
- Show you what I eat. It’s not all uber healthy, but I do try to maintain a balance of satisfying my cravings and getting my needed nutrients. This is how I, Amanda, eat.
- Remind you it’s okay to have dessert. And that I do on a regular basis.
- Inspire you if you are in a food rut. I know I personally love reading other blogs or even browsing Pinterest when I’m in one of those ruts so hopefully these posts can help!
Let’s get into it, shall we?
Since the last Foodspirational Eats post, I have been collecting photos in a folder on my desktop. There were A LOT, so I just picked out some of my favorites. π The photo of my toast in the big collage of eats has been my breakfast for a couple of weeks: whole wheat bread, Jif peanut butter, Seven Sundays muesli (giveaway happening now!!) and sunflower nuts. Yum!
Flaxseed Hungry Jack Waffles. Nuff said.
I am actually noshing on basically the exact bowl you see on the bottom right now! Cheerios, cashews and M+Ms. Because it’s Valentine’s week… π (See other Valentine’s Day goodies here.) You’ll also note the cookie-dough like ball I’m holding. I call that a power ball. Or power bite. Haven’t quite decided, but I will be sharing the recipe soon! (Dave and I have been giggling like 10 year olds because we grab one out of the fridge and say something like “these balls are amazing!” Immature much?)
Dave’s boss sent us a ginormous ham for Christmas. We are still slowly taking portions out of the freezer to dethaw and eat. I can up with this little creation involving Pilsbury flaky biscuits (oh my yum), chipotle sauce, spinach and shredded cheese. Dave likes his cold, but I warm mine a bit so the cheese gets melty. Heaven in a sandwich!
I’ve been working a lot more hours at the cafe since my boss is out of town, therefore I have been a little slacking in other areas of my life. Like grocery shopping. Poor Dave. What I do instead is get food from the cafe. Last week I assembled giant salads at work to take home for Dave and I. Let me tell you, it hit the spot. This one was turkey and bacon (both heated when I got home), boiled egg, avocado, and tomato. I believe I also added some shredded cheese and had a side of chipotle ranch from the cafe.
Welp, time to get ready for work! Make today a good one, friends! π

I have to start packing a lunch again soon, so giant salads will be a staple. I’ll pile on lots of cucumbers, turkey, and fun stuff like kidney beans, bacon, and goldfish. It usually does not resemble a healthy veggie salad when I’m done with it.
