Sometimes I over-think things.
Slash that.
I over-think things all the time and I’m working on not driving myself crazy with my over-active brain. π
For example, I really wanted to post this recipe Thursday since I gave everyone a teaser on Wednesday with the eats from the blogger brunch and bootcamp.
When that didn’t happen I was all, “Ooooh I should post these on Saturday because who wouldn’t want to make waffles this weekend??”
When that didn’t happen I was like, “Okay how about waffle Sunday?” (my friend Heather has done pancake Sunday)
Then when Dave and I decided to stay up until 3am Sunday I was all like….hmm…when will I post this?? Should I wait until Saturday for the whole waffle weekend thing?
Then I was like (because I’m obviously a Valley girl who says “like” and “oh em gee”), “seriously Amanda just post the flippin’ waffle recipe.”
Please note that your name does not have to be Jack in order to eat these. π
Am I the only one that thinks of donkey in Shrek when I hear someone’s making waffles?
“And in the mornin’ I’m makin’ WAFFLES!” I may have died laughing when I first heard that line.
I actually made something similar to this Friday, but using the Archer Farms Blueberry waffle mix as a base. I also cranked up the waffle maker to make the waffles extra crispy. Topped those bad boys with some peanut butter, Archer Farms raspberry syrup, and Seven Sundays muesli. My oh my were they delectable!

Besides debating on when I would post this waffle recipe this weekend, I also decided I need one day per week to not do computer-related work. After writing the post about working from home (and spending 5+ hours writing one lousy article on Saturday/Sunday) I realized I spend A LOT of time on my laptop and very little time doing…anything else that needs to be done. I figure if I can unplug for one day I can get cleaning done, studying for NASM done (eek! need to move on that asap!) and maybe hang out with Dave or something.
I decided Saturdays are going to be my unplugging day (I didn’t mention anything about the phone..hopefully the problem doesn’t turn into me staring at my android all day long!). We are also doing no tv Sundays between 12 and 8pm. We’ll see how it goes! Hopefully this will make my whole week a little less stressful if I know there is one day I don’t have to tap away at my keys. Plus I will be all the more excited to be at it the next day! π
Oh! I almost forgot…I also received my very first Stitch Fix!! Can’t wait to tell you all about the goodies inside! π

Oh man! I am actually the same with the overthinking thing! That is exactly the kind of thought process I go through too! But they were worth the wait! They look wonderful! I havent made waffles in a while. maybe now is the time to try, I loved that you made them crunchy this weekend too, I love crunchy things! Seems like we are very similar π Thanks for the recipe!
