I did something very embarrassing. So awful. Hilarious, but at the same time humiliating. Unbelievable.
Because seriously…who does this?
I had this great idea (and it still is a great idea, it just ended badly). I was going to make an egg bake in a skillet! Yum, right?? I was going to use the things I already had in the fridge. Like a good chef. I had eggs, greens, tomatoes and lots of bacon.
Then the idea became genius. I used potatoes last time I made an egg casserole, but I had no potatoes this time. What I did have was mashed potatoes. I’d just use mashed taters for a “crust” and add the eggs infused with veggies and bacon goodness to the skillet and bake away. I took this Instagram picture before sticking it in the oven. My hopes were high.
And it worked!
35 minutes later we had a gorgeous skillet bake with days of semi-healthy breakfasts ahead of us! I sampled a piece before bed, not taking a picture since I would wait until the next day when there was sunlight for some great foodie photos. I covered the skillet with saran wrap and left it on the counter. Then we hit the hay in anticipation of a delicious breakfast. Does anyone see the problem?
Dave heated up a piece in the morning and he was off to work. I had my standard peanut butter on something (this week’s variety is whole wheat english muffin delight), then I headed to work myself. With the skillet sitting on the counter. Do you see the problem now?
During a busy work day, I had a much needed break with a chipotle chicken quesadilla with spicy salad.
After work I headed to a coffee shop to get some writing done, including writing up my Chocolate Chip Pumpkin Cake in a Mug recipe.
I munched on the most awful bacon egg sandwich thing at Caribou coffee along with a delightful soy latte with raspberry that made up for the egg thing. Despite sitting on a stool with no back where I had to type hunched over, it was a pretty great place to write.
It had just the right amount of background noise, you know? (including the soft Christmas music that almost made me roll my eyes when I heard it come on..I swear I’m not a Christmas grinch, but isn’t it a bit early?) I realized it was close to rush hour (I work at 6:30am and usually get off around 2pm so I usually miss rush hour, thank goodness!), so I quickly gathered my things and ventured back out into the chilly outdoors. It took about an hour to get home (dangit) bringing me to 5pm. I planned on eating a slice of the egg bake goodness, but when I uncovered my prize, it looked a little funny. Slimy even and had a slight smell. I decided I wasn’t quite hungry enough so I got to some blog reading and laundry.
Would you believe me if I told you that it took me another hour (or two) to realize what I had done? I could blame sleepiness, but I think I am honestly just used to baking my skillet cookies and leaving them on the counter. So that’s what I did this time, only to realize a full 24 hours later that I left AN EGG BAKE out on the counter for 24 hours. Yeah, the slimy look and slight smell was the stench of rotting meat. Seriously, Amanda?? I mean, really??
After cleaning the skillet thoroughly and vigorously then pouting quite a bit, I made a meal similar to my breakfast, but with the addition of some chips, guacamole and a sparkling beverage that made me feel a little better about life.

I then proceeded to sit my tired self on the couch and watch approximately 4 hours of Breaking Bad. I knew I shouldn’t have started another show on Netflix!! Also Dave shouldn’t leave me alone for long periods of time…otherwise disasters and ridiculous Netflix marathoning happens. ๐

Don’t get me wrong, I was pretty upset that I had to dump my beautiful creation AND decided to wash my cast iron skillet with soap and water (a no-no in cast iron land meaning I have to spend all Wednesday re-seasoning the thing), but it’s kind of funny, right? I mean who does that??
So I hope this story makes you feel better about anything silly you have done recently. At least you didn’t leave meat out on the counter for a full day and almost eat it. ๐

Haha I have definitely done that before…not with an egg bake, but with other dinners that I have forgotten to put in the fridge! Also–what plugin/device do you use to post your recipes on your blog? I like the way they look!

So glad I’m not the only one! Except I kind of did it on purpose since I usually leave my skillet COOKIES in the same spot on the counter haha.
I’ve used recipage (and still do for organizing them) but that recipe plugin is yumprint!

Gah!!! oh no!! I would totally be pouting too. I hate to waste. Although I’m glad you made the decision to ditch it! lol and I have totally left stuff on the counter to cool before going into the fridge only to find it still on the counter the next morning!
