I am all about quick and easy meals…especially when they last a couple of days (hello leftovers!!). This western egg casserole was super satisfying, flavorful and made a great brinner as well as breakfasts throughout the week.
This was not all that quick when Dave and I were making it, but that is likely because we spent more time scrubbing our potatoes, deciding just to peel them, realizing we didn’t have a potato peeler, then meticulously cutting the skins off with a little knife. (the things you learn when trying to cook something new!)
The directions I wrote out condense the amount of time it will take for prep work so that you won’t be up late like I was trying to figure it all out. (We definitely didn’t move very efficiently when making this.) And you probably already have a potato peeler, right?
Of course when you are experimenting with recipes or trying something new for dinner, you should probably not start at 8pm when you have to work at 6:30am the next morning…just sayin.’
This recipe was as a result of Dave telling me (more than once) about this uh-mazing egg baked thing that one of his coworkers brought to work.
I’m not gonna lie…I get a little bit jealous (and competitive) when my man talks about someone else’s cooking. Like on Friends when Monica told Chandler she met the “funniest” man ever at work and Chandler spent that week trying to make awesome jokes. Because being funny was his thing.
Making food is kind of my thing. I had to create something even more awesome, and I think I succeeded. I’ve since been making egg casseroles at least once a month because they are super easy to throw together.
Western Egg Casserole (5-6 servings) [ NF ]
Ingredients
-8 strips of thick-cut bacon
-8-10 small red potatoes (for a quicker version, use pre-peeled and cubed potatoes you can usually find by the eggs at the grocery store. I do this all the time, so no shame!)
-10 eggs
-1 tomato
-1/2 white onion
-salt, pepper (and mrs dash if you wish) to taste
-cheese for sprinkling- about 1/4 cup (I used mozzarella and pepper jack since my stomach can handle it)
-optional: chips crushed on top for texture (I used blue tortilla chips)
Instructions
1. Preheat oven to 350 F.
2. Peel and cube potatoes.
3. Fry up the bacon. While it’s frying (preferably in an awesome cast iron skillet), chop up your potatoes, tomato and half of an onion.
4. After the bacon is done frying, brown the potatoes in the skillet.
5. Meanwhile, crack eggs into a bowl; add tomato and onion to mix. Salt and pepper (and mrs dash if you wish) to taste (keep in mind the only other flavoring will be from the bacon).
6. Put the potatoes in the bottom of a greased 9×13 casserole dish.
7. Add egg mix to potatoes.
8. Top with cheese.
9. Bake covered in foil for 20 minutes at 350 degrees F. Remove foil and bake for another 10 minutes or until the eggs are firm and cheese is bubbly. (total time 30-35 minutes)
Notes: To modify this recipe to use whatever veggies you have on hand, chop up about a heaping cup of the veggies and substitute them for the tomato and onion.

Oh and bonus recipe to use the leftovers in a fun way. Yes, there are a lot of carbohydrates involved, but they are the good kind. Just eat this sandwich after a long run to replenish your energy. ๐
Western Egg Sandwich
Ingredients
-Slice of my Western Egg Casserole dish
-small amount of lettuce
-whole wheat English muffin, toasted
-red pepper hummus (or tomato hummus or chipotle hummus)
Instructions
1. Spread 1 TBS hummus on the English muffin.
2. Add lettuce.
3. Top with heated up slice of Western Egg Casserole dish
