As I attempted to recreate this recipe tonight for the lovely gals visiting me for HLS (Healthy Living Summit) this weekend, I almost had a major catastrophe.
I was whipping up the delightful doughey goodness that tops the mallows and graham cracker crust of this delightful S’mores Cookie Dough Pie with a hand mixer when it was time to put in the chocolate chips. I no longer needed the hand mixer since I fold them in with a spatula, so I turned off the mixer, unplugged it and Spark! Pop!
Um..what the heck was that?
I looked down to see black charred marks on the plug.
That can’t be good.
I went about my business, portioning off some of the dough for later (to eat later, to be more specific–that’s normal, right?). I opened the fridge to put my little stash of dough away.
Oh crap.
The light on the fridge was out and the usual hum of my wonderful stainless steel cooling contraption was non-existant. It was 6:30pm, after the apartment office closes, so I would have to contact the “emergency” maintenance team. I’m sorry, but in my mind the fridge/freezer not working is an emergency.
I frantically dialed the number, telling the woman on the other end of my dilema. When I asked how long it would be until someone could get back to me she gave the usual reply, “I’m sorry, I don’t know how long it will be.”
Drat.
Did I mention I had just gone grocery shopping that day? Like a big shopping trip. One that I went on when I was hungry after a day on my feet and had to make three trips back to the car (the fourth one is still to come). The fridge and freezer were stocked full of glorious eats and I feared I’d have to deal with sad spoiled food in the morning. I had tears in my tired eyes just thinking about it.
Fortunately I have Dave. I alerted him via text to call me ASAP. This was serious.
Then he told me it was probably just a fuse. A fuse! (Duh Amanda.)
Every time I’ve dealt with a blown fuse in every other apartment (and even a house), EVERYTHING shuts off. It has always been very apparent I did something wrong and I would apologize to my appliances and sulk off to the fuse box to redeem myself. Since only the fridge was affected…I don’t know. I just didn’t think to do the simplest thing.
All I had to do was to find the switch that wasn’t lined up properly, flip it off and back on again.
What I want to know is, why the heck didn’t the lady at the phone tell me that…?
Anyhow, this deliciocity is getting baked up again! I don’t think my friends will mind if I taste-test it, right? I mean who knows what the crazy hand-mixer did to the poor chocolate chip cookie dough??
S’mores Cookie Dough Pie
Crust
- I used a pre-made 9 inch graham cracker crust.
Marshmallows
- I used jumbo marshmallows cut in half, sticky side down. Fill up the bottom layer of the graham cracker crust.
Cookie Dough Topping
- 3/4 cup butter (room temperature or melted slightly)
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1 + 1/2 cup all purpose flour
- 1 tsp baking powder
- 1 tsp sea salt
- 8-10 oz of chocolate chips (I used semi-sweet)
Mix together dough:

As I’ve stated many times (here and on Instagram), this was an inspiration from Becky! She made S’mores Cookie Dough Bars for her going away shindig (she lived in the twin cities the first two months I did and then moved..sad day) and I could not get them out of my head after I had them (for breakfast every day for a week). I even tried to replicate the cookie dough part which actually resulted in my M+M Butter Cookie Bars.

Our last apartment didn’t have a fuse box in it. The first time we shut off half our apartment (after living there for almost two years) we couldn’t find it, called – and the lady didn’t tell us it was in the laundry room. We were without electricity for like a day and a half! The next time, boyfriend found it and saved us. I was so pissed though!

Whenever my power goes out it ALWAYS happens right after a big grocery shop. And one time the fuse blew in the kitchen but only on the side of the wall that had the microwave. So we all thought the Microwave was broken and ended up throwing it out and buying a new one. All to find out the next day that it was just the fuse!

FINALLY got my act together and got a new fridge after one episode that involved too much crying for a “grown” woman.
So happy your was just a fuse! And don’t you love how men just KNOW to ask that? For a long time I assumed our fuse box was down the hall rather than in our apartment. My boyfriend still doesn’t let me live it down.

I used to live at a place that had such terrible heating that I bought a space heater. So if you would run the space heater and the blow dryer at the same time, everything would shut off. I don’t blow dry my hair, but my friend who lived with me for a month does, and it was pretty ridiculous.
