Okay friends, today I will be taking my last two finals…one in a nutrition class and one in Statistics. Wish me luck!
Also get excited about the month of May! I have giveaways and reviews and recipes and nutrition and fitness posts that I’ve been dying to write, but I’ve needed to focus and trudge through this semester. I regretably had to drop my second semester of Chemistry because I got so far behind in all of my other classes (as well as barely making it in Chemistry) and I knew I couldn’t let my GPA suffer even more because of a hobby (no matter how much I LOVE it and LOVE hearing from all of you and LOVE reading other blogs!!)
It’s torture to have ideas for posts on a daily basis, but knowing I can’t do everything.
Luckily I have people like this adorable gal to take some of the burden off of keeping up a blog! (Also check the last guest post about why bones are important to overall health. Good stuff!)

I’m happy I can share a post with you all, because Amanda’s blog is awesome! I love her “vegetarian curious” posts, and as a full-time vegetarian I love hearing about other people eating sans meat. My blog is filled with super simple vegetarian recipes, because I know people are busy! Fast, simple, and easy recipes are a great way to stay healthy, without spending a whole day in the kitchen. Since vegetables are what I know and love, I wanted to share a few of my favorite recipes with you.
Vegetarian cooking can sound complicated if you’re new to meat-free dishes, but in a lot of ways, it’s easier! It also tends to be cheaper, which is an added bonus. So today, skip the meat, grab some greens, and try a few new ways to eat your veggies!
These Oven Baked Zucchini Fries are easy to make, but will make even the most avid meat-eater try their veggies! My roommates and I made these for the Super Bowl, and they were eaten up faster than the chips and dip! They’re delicious, but still relatively healthy. It’s a great way to sneak in some more vegetables.
You might want to make a double batch of those, because they go fast! Even stubborn boyfriends and husbands will snack on these!
If you’re looking for a vegetarian main dish, give these lentil stuffed peppers a try. I made these for my meat-eating parents when I went home to visit, and even my dad ate the whole thing!
These are packed with lentils, and if you haven’t given them a chance, here are a few reasons to try them!
Why you should eat lentils:
- They’re high in protein
- They’re a great source of fiber
- They pack in iron and other minerals
- They’re cheap and taste awesome
Not bad, right? Buying lentils in the bulk bins is a great way to keep your pantry stocked without breaking the bank! Served with a side salad, these make a great vegetarian main dish! (From Amanda: Ah this reminds me of a recipe I need to give you guys!!)
