It’s FRIDAY! I always have mixed feelings about the weekend.
In my waitressing/coffee catering days, I worked weekends, so while it was cool to not have school…I still had to get up at 4:30am a lot of Saturdays to work the farmer’s market or work Saturday nights at the wing-n-beer joint. Now I get to go “home” some weekends, but I still have homework looming over my head and I always get back late and have tons of things to do and stay up till 2am Sunday….okay going to see my family is amazing, but I like to complain I guess. 😉
I also get a little sad when Dave has to work on the weekend and I don’t get to see him for 12 whole days!!
PLUS I have 4 tests next week…I might want to study a bit over the weekend, huh?
I DO get to run a 10K this weekend called the Leprechaun Chase 10K! I am super excited about it because it’s one of those runs that I keep meaning to sign up for…only to realize too late that it’s full due to the awesome factor. I also get to see my roomie there since she has been out of town in the hospital with her warrior of a mom. It’s been a little lonely around here!
I also get to sleep in this weekend AND in my own bed! Hoorah!
I used to do Friday Five Foodie Finds, but I realized recently that I have more I want to share about than just food!
(PS when I don’t post for days in a row, my posts get a little long…grab some coffee and prepare to read my book!)
Back to my roomie. Her mom, Carol, is battling cancer that started in her ovary and has now spread to some of the surrounding area. She found out about this after running a MARATHON where Amber, my roomie realized that her mom wasn’t out-running her like she usually was. This just scratches the surface of how much of a trooper Carol is.
Please “like” the page created for her called Team Carol where you can post miles that you run for her. Prayers are welcome and encouraged as well!
I swear the coolest part about her is her attitude. And I haven’t even met her yet! She posts positive comments and encourages people to get out there and MOVE while she is unable to. She is even pushing Amber to run the 10K this Saturday, even though I’m sure Amber would rather spend as much time with her as possible.
This post goes out to all food or “healthy living” bloggers out there. We need to be very careful of the way we present things like our WIAW posts or photos we share of ourselves (to an extent…) in order to be sensitive to those who are reading our blogs that have or have had eating disorders.
There are some out there that could look at what I ate in a day and think “she’s only eating x number of calories per day, so that is how much I should eat.” Sometimes I do point out that on a particular day, I sat around and didn’t move much, so my calorie requirements weren’t very high. I should also point out that I am a petite 5’2″ woman who might not require as much as the average woman. I know we can’t (and shouldn’t) preface EVERY post on food with disclaimers, but it is certainly something to keep in mind.
This post made me feel way guilty. I really do consume a whole lot of sugar and a lot of my recipes in my past Friday Five Foodie Finds have been dessert-related. Plus I’m pretty much obsessed with cookies! It’s amazing how much dessert food blogs and shows have taken over! I think this is one small piece to the puzzle that is America’s obesity epidemic.
Sweets DO have their place, but they should by no means be the center of our diet. Good for Jenn for putting such a bold piece out amongst a plethora of baking bloggers and such!
I applaud Lindsay for coming to this realization and for being so open about it. I hope that other moms will either follow in her footsteps if they feel the pull to do so, and that other moms who aren’t involved in 5 billion activities outside the home won’t feel so bad about not over-extending themselves. I’m obviously not a mother, so I can’t have a real opinion on this, but I would like to hope that when I am a mom, I will be able to draw my own line between spending time with my kids and working on whatever I feel like I need to be working on.
I knew restaurants varied from country to country based on local preferences…but had no idea that certain additives were taken out in other countries. It makes sense that if certain ingredients are banned, then the company cannot add them in, but seriously, don’t Americans need to take a stand in this area? If you go to this post, there is a petition on the bottom to sign if Genetically Modified Ingredients, aka added fakeness to your foods, bothers you.
I like thinking about things and using this blog (and my lovely readers) to bounce ideas off of and just plain venting about life.

No, I’m not engaged and no, I don’t have enough space to prep foods like this (post below), but it never helps to plan ahead and think about the future!
If you’re like me, you think about the future all. the. time. (Duh, I follow mommy blogs, dietician blogs and this wedding blog!) It’s exciting right? Although sometimes I plan to the extreme and then get impatient!

Now THAT is a fun way to make meatloaf! We should have seen this before we made meatloaf for our friends last weekend!
I’ve been getting creative with meals and snacks around here because I am determined to spend less on food. I’ve realized that I often go out for groceries when I still have perfectly good food at home!
I had been eating leftover tacos, but ran out of taco meat. What did I have plenty of? Eggs!
I decided to make an egg salad, spinach, black bean roasted pepper salsa wrap. And it was DIVINE!
Dave surprised me when he drove through my city and grabbed dinner with me in the union on campus. I thought I wasn’t going to see him for two weeks!

This handsome fella might be getting a permanent position on the railroad (finally)!! He’s been working “in training” for almost 2 years now! He is going to be standing in for a manager in Kansas City (staying at hotel for awhile longer) and if the chips fall into place..the job will be his! I am so stinkin proud of him!!

I was debating on going to this Networking for Nutrition event at school as a part of the dietetics club I recently joined (in an effort to put SOMETHING on my resume for the intense internship application process). The picture above was to promote MINK which is a dietetics conference involving 4 states. I really want to go but of course I have 4 other things going on that weekend. We will see!
Hours before leaving, I tried on the black dress pants I was planning on wearing. Did you guess that they didn’t fit? You were right! And we were supposed to be dressed “business casual” so I was guessing jeans wouldn’t work…
Apparently I left the rest of my dress clothes at my dad’s house in my hometown, so I was a little baffled as to what to do. I still had to finish my lab write-up which was due in an hour so there was no way I could run to the store.
Can I tell you a secret? I wore black workout pants! And no one said anything so I’m guessing no one noticed!

Aside from the victorious pants move, my passion for nutrition and dietetics got rekindled when I was reminded how many different things I can do as a Registered Dietician. From hospitals, to schools, to educating, to children’s programs, to being an entrepreneur like my good friend RD Amber. It was great to get to ask questions and get the wheels turning for what I can do once I graduate, do my internship and take the scary RD exam. I caught a glimpse of the light at the end of the tunnel!

Well, wish me luck on my 10K tomorrow!! I’m kind of nervous since the longest I’ve run this year has been 5 miles!!

Tacos … everything from whole wheat tortillas and ground turkey with lowfat cheese, to organic sprouted gluten-free tortillas with dairy-free cheese and tofurkey. You know, mutant food. I’m back to eating human food again.

haha whole wheat isn’t mutant food!! It’s much less mutant than enriched white flour! 😉
But I get what you’re saying…it can get a little extreme if you start substituting EVERYTHING! 🙂

So much happening here…I am glad you pointed out some of my favorite posts from last week, as well as one that I need to look at, since it is something I wonder about (how people react internally to posts based on their own previous experiences). Also, I am going to have to investigate DIY Bisquick. I know that there are so many ‘healthier’ alternatives (whole wheat pancakes, oat pancakes, etc. etc.) but when it comes down to it, we always want what we grew up with. And for me? That was Bisquick. [Well, unless I was in Georgia eating Bertha’s corn cakes, but that’s a whole different thing really. :)]
