The post below is actually a post I had written over break, but not yet published. I was going to do Thankful Thursday yesterday, WIAW the day before and a Faithful Friday post today, but friends, it’s been a rough week.
Speeding ticket Sunday on my way to church, a day of everything going wrong Tuesday, and last night I took a Chemistry test, which I don’t even want to know the results.
The crummy frosting on the bitterly awful cake was when I went a little nuts with long-distance relationship trust issues last night. Being in a long distance relationship with trust issues from past relationships, coupled with underlying anxiety and depression is not a good mix. Not a good mix indeed.
This morning I re-heated some of these chocolate chip banana muffins (that I heated up last night from the freezer but was too upset to eat). Not only are they tasty, but it made me think of how food really can help make someone feel better.
I don’t know what your food issues are, but when I get stressed or upset, my stomach does not want food. If you have overeating problems you might think this is preferable…but our body needs food! And food should be enjoyed! I’ve really had to choke down my breakfasts lately, which is so sad because I usually LOVE my peanutbutter toast. So when I can finally eat and something tastes good…it’s a small victory.
And come on, how can chocolate chip banana muffins that have whole wheat and applesauce goodness NOT make a person feel just a little better?

I told you about my baking day with dear friend Emily…but I hardly gave you the details of what goodies we made since I was so busy talking about the sweet giveaway. (Seriously, check out her cute apron she’s giving away to one lucky semi-healthy reader!)
Emily made some yummy cake batter puppy chow based on this recipe.
It was super adorable watching Miss Rhea try to grab the puppy chow from the table.
At one point she got super sneaky and grabbed a wooden spoon to pull the pieces to her. Nothing but admiration here!
I was even more impressed with how helpful that little girl was in the kitchen!
She can pour and stir with minimal mess. She’s not even two yet!
Emily also made a decadent brownie dessert (that I decided to add my own twist to later on and bring it to Thanksgiving dinner. Thanks Emily! 🙂 )
For my baking contribution, I decided to use up the 3 bananas I had that were almost too ripe, and put them in some yummy muffins!
Since I made a double batch of muffins, and Emily used her second muffin tin for biscuits with our chili dinner…we made some mini muffins!
- 3 ripe bananas
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/4 cup oil
- 1/4 cup applesauce
- 1/2 tsp all spice
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/4 cup mini chocolate chips
- optional: chocolate shreds or topping

After leaving some muffins for the Dixson family, I put the rest in the freezer and just heat a few up in the microwave for breakfast, a snack or a treat!
Emily sent me this picture of Rhea mowwing down on one of the cupcakes with the caption “Yummy muffins Manna!” Manna is what she calls me, because she is now saying my name…I die.

I’m trying to think of a positive note to end on. It’s challenging when I feel like I’m still trying to crawl out of this hole. Depression really is a battle. It doesn’t go away, it just sits there, waiting for life to get hectic and attacks when you’re most vulnerable.
I am very thankful for my friends who are praying for me. My sweet sweet friend Emily asked me last night if she could pray about anything last night. This was before my epic meltdown, so I just asked for her to pray over the TAs grading my Chemistry test. It is so good to have a friend like her. And to have friends like those on Facebook who are willing to pray for me. So. Very. Grateful.
Sorry to get so deep on a Friday, friends! It’s just one of those weeks. I cannot wait for winter break!! I might be back later today to wrap up 30 Days of Thanks, but we will see! :)j

I wrote a bare your soul kind of post this morning, had a minor freakout after I hit publish and then immediately put it back to edit mode. So…I admire you for having the courage to write about your problems. It probably feels good internally, but it also shows confidence and let’s others know that they aren’t alone.
