It’s Wednesday! Another WIAW! {What I Ate Wednesday} (More info here!)
Food is like gold around my house these days. I will be moving to the city where I go to school soon, so this means that I will have to pay rent, utilities, buy all the little things that the Daddio bought like tp…and I don’t even have a job lined up there yet. Will be livin’ on a prayer for sure!
{Breakfast}: My peanutbutter toast! With a little cinnamon sugar on top!
My gummy vitamins have changed recently to omega 6 vitamins and immune system vitamins. I figure it’s that time of the year when people are getting sick, so I might as well be prepared!
But again, food is like gold over here. I am trying so hard to not throw things out…and this includes leftovers. Bringing home leftovers is like having free food. Especially when Dave (the BF) paid for the food. Thanks Dave! 🙂
Leftover food is good for about a week in the fridge. So this weekend I knew I had to use up my Chili’s leftovers. Since Chili’s food isn’t exactly the healthiest, I healthified the food a bit.
{Southwest eggrolls.}
I got a new mini food processor (that I’m SO EXCITED ABOUT) and I tried it out. I mixed up some cottage cheese and spices to substitute for the ranch dip that came with it (that I left at the restaurant). I added a side of carrot chips and had a lovely little semi-healthy lunch.
{Club tacos.}
Again, to substitute for a ranch sauce, I added some cottage cheese, then added spinach. I was still hungry after (duh..one taco Amanda), so I heated up some frozen green beans and added sunflower seeds and a little margarine.
{Dessert} was the yummy chocolate chip banana muffins I made with my friend Emily on Saturday.

{Late night snack}: Peanutbutter cheerios, mini chocolate chips and string cheese with bedtime tea.
I pretty much always have a late night snack.
I can’t sleep if I’m hungry so I will have one pretty much right before bed.
Just so ya know, it’s totally false that eating late at night makes you gain weight. It does matter what you eat…of course eating two bowls of icecream every night might make you gain weight, but just eating at night does not make a difference.
I’m off to hang out with my little sis! Possibly bake something semi-healthy to take to Thanksgiving dinner at my grandma’s tomorrow!

I’m 25 so I have a feeling care packages won’t happen…apparently I’m supposed to be an adult by now? lol 😉
