Banana Spiced Muffin Top Cookies

Hello Friends!

Sometimes an accident can be a wonderful thing.  Take these Banana Spiced Muffin Top Cookies, for example.


I was going for cookies, but the texture and taste were so close to that of a banana muffin that I couldn’t just call them a cookie.  And of course they don’t really look like muffins…they look like muffin tops!

And of course when I told Dave (the BF) that they turned out like muffin tops, he asked if they were whole grain and no fat.  No, not because he is on a diet (although he kind of is), because it reminded him of a song from 30 Rock that I sang over and over when I first heard it. (Don’t mind the scantily clad women…and erotic noises?  I couldn’t find a clip from the show but you can get the idea here.)

Back to the delightful muffin top cookies. {Print Recipe}

What You Need:

  • 1 3/4 cups whole wheat flour
  • 1 egg
  • 1 stick of butter (at room temperature or melted a little)
  • 1 ripe mashed banana
  • 3/4 cup brown sugar
  • 20 drops NuNaturals vanilla sweetener (substituted for 1/4 cup sugar)
  • 1 tsp maple flavoring
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp all spice
  • 1 tsp salt
  • 1 tsp baking powder
  • cinnamon sugar (enough to sprinkle the cookie dough)

How To Make:

  • Cream together wet ingredients.  
  • In a separate bowl mix dry ingredients.  
  • Add to wet ingredients and refrigerate for at least an hour.  
  • Scoop dough with a spoon and roll into balls.  
  • Roll balls into cinnamon sugar OR use your handy-dandy Trader Joe’s cinnamon sugar grinder.
  • Place on a non-stick pan (or pammed pan) and bake for 10 minutes at 350 degrees F.

Enjoy with tea or coffee.  They are helpful study buddies, and are especially good while you are hanging out reading blogs.

 

P.S. Is any one else having a crazy allergy day??
I was fine until after my cardio class (the last one by the way!) and it was like an itchy feather started tickling my nose and caused it to run like a flippin faucet.  It still hasn’t calmed down even though I took extra allergy meds.  I finally figured out one that works for me and the dose that works is half a pill in the am and half at bedtime.  So I look like I’m a druggy when I’m attempting to split the pills.

Good tangent yes?

Hope everyone is having a great Friday night!  I just put these little stinkers I’m babysitting to bed. 🙂

    lol I just watched that episode of 30 Rock. I hadn’t started watching that show until recently, but I’m a season into it and was hoping to catch up to Mark and the roommate, but I don’t have all the time in the world. 😉

    Smart idea to call these muffin top cookies! you could probably do the same thing with pumpkin.
