Awhile back I sang praises for Jenn‘s marvelous guacamole recipes on one of my Friday Five Foodie Finds and have been wanting to try out making guacamole myself.
That’s right friends, I’ve never made the stuff. (Until now!)
I have since then watched in awe as my friend April and her husband whip out an avocado and start mashing and adding things and all of a sudden…you have a deliciously fresh dip for chips or veggies.
I’ve also tried guacamole on subway sandwiches (they call it avacado…but it’s mashed and I’m sure they add things to it…when does an avocado stop becoming and avocado and turn into guacamole?). It is delicious when fresh, but dreadful when you try to save half for the next day. Brown and soggy.
Yet another guacamole love of mine is Chili’s fire-roasted version. There is corn and beans with a kick. Perfect with their home-made greasy chips. 😉
So when I saw that avocados were on sale last week…I got excited. And then I decided I was going to try to copy-cat the Chili’s version..sort of.
I used this southwestern style canned corn for my crockpot chili and decided to hunt it down. I don’t buy canned…anything.. really, so this was truly a hunt for me!
I found some chiles that I thought would add some of that Chili’s style kick to it.
I have been trying to figure out a name for this creation. And as it is late and I am exhausted, I of course came up with the BEST name. You see, the corn reminds me of Nebraska, which is where I live. And it is a little bit Mexican style as well.
I give you Nebrexican Guac. I know right. {Print Recipe}
Ingredients: (serves 2)
1 avocado
1/3 to 1/2 can of southwestern style corn
1/2 can of diced chiles
lemon juice from half a lemon
pepper*
sea salt*
Ms Dash southwest spice*
chili powder*
* = to taste or about 1tsp
How To:
Smash cut avocado around the core. Scoop out meaty portion and smash it in a bowl with a fork.
Season the mashed avocado and then add the corn and chiles.
Enjoy with chips, veggies or on a wrap (as in my WIAW) or sandwich.
Tips for keeping the guacamole fresh:
- Adding either lemon or lime juice helps it from browning.
- Also storing the avocado core with the guacamole supposedly helps…it seemed to work for me!
I’m excited to make this at parties for people and wow them with my avocado mashing skills!

Niice that looks tasty !! There’s nothing like fresh guacamole 🙂 I find sprinkling lemon juice and leaving the pit in the half i’m not using helps preserve it for a day or so, too.

in addition to the pit, when you’re storing the guac for later add a little extra lemon or lime juice to the mix and saran wrap it like a little burrito, pressing the air out as you wrap. THEN put it in the tupperware and pop it in the fridge! viola! no brown mush! =)

Niice that looks tasty !! There’s nothing like fresh guacamole 🙂 I find sprinkling lemon juice and leaving the pit in the half i’m not using helps preserve it for a day or so, too.

I love just randomly throwing veggies in with avocado to make my own guacamole! I can’t believe for years I actually thought it would be complicated! Lol
