I was sending BF Dave a picture of the yummy guacamole dip I made tonight (get excited!), I realized how much I miss making food for him or with him. He has been traveling a lot the past few months and I’ve felt pretty uninspired making meals just for myself.
A couple of weeks ago Dave and I had a little date night together. We made hamburger helper in our own special way and watched Toy Story III. I know! Romantic! 😉
I grew up making Hamburger Helper with my mom. It was always my job to brown the hamburger. I’m not gonna lie…I got quite good at it.
In recent years I’ve realized that there is little nutritional value in the stuff besides the protein in the meat. So I try to add my own veggies and lean ground turkey for a semi-healthy version.

To the Italian Lasagna Hamburger Helper, we added red peppers AND Dave decided to sautee a yellow pepper in olive oil with “Italian-sounding herbs” such as thyme, garlic, parsley and oregano. It was, after all, Italian Hamburger Helper. Dave loves to dice his vegetables super small…and it takes FOREVER! I like to just get it done fast and do a “rough chop” like they call it on the fancy cooking shows I’m addicted to….the sacrifices we make for our loves. 😉
We also added some Italian cheeses on top. I think I like Italian dishes because I can actually eat the cheese! Yellow cheeses hurt my tummy, but white are all good.

Also you may (or may not) be proud of me…I didn’t read a single blog today (in accordance with my recent decision). It’s really helping me to just hang out on my blog a little and remind myself that this is me and I don’t need to try to be like anyone else. I will probably see how I’m feeling Monday and get back to checking out the other lovely blogs I follow. I just need my safe space a little longer. 🙂
Hope you all are enjoying the Olympics as much as I am! I LOVE watching gymnastics. The ladies are so talented and so flippin young. I definitely didn’t have that kind of discipline at that young of an age.

Do you like your veggies diced up small or just a “rough chop?” (also does punctuation confuse you in this sentence? could not figure where to put the question mark!)

My husband LOVES Hamburger Helper, but only the Cheeseburger Macaoroni kind. I did find one that uses whole wheat pasta and a local supermarket has one that is organic and whole wheat…but I never thought about adding veggies and using turkey – thank you for the idea! I like my veggies chopped small as well and just use my small food processor – gets the job done pretty quickly and no dicing of the fingers (happens far too often!).
