How is your Thursday going? It’s pretty chilly in this neck of the woods…finally! I thought winter would never come!! I just got back from Chem class and instead of working on my online homework or the insane amount of Chem homework I have to do (don’t forget about the test I have in Chem next week…where is that hole I dug??), I decided I’d share a couple of little meal ideas.
The BF was outa town and when that happens I feel generally unmotivated to make amazing meals since it’s just, well, moi at the dinner table (er.. t.v. tray). I made a couple of quick fixes that BOTH used PEAS. *gasp*
Did you ever have a food as a kid that you refused to eat?
I did. Many foods. And ones that everyone is supposed to like such as grapes (I adore them now…my mouth is actually watering thinking about their sweet juicy goodness), or oranges, or the worst of all worst foods that actually made me gag when I was at my babysitter’s house was PEAS.
Maybe it’s the texture of the little guys that grossed me out…I mean it’s not that bad but the mushy weirdness is still a little bleh to me.
Well I accidentally (believe me it was a huge accident) got frozen peas that for some reason I thought were snap peas or something other than what they actually were..which was the gag-inducing, little green monsters known as PEAS.

I had gotten them to put in my tai food and when I was making it with the BF I just played it cool like “oh I cook with these bad boys all the time.” But secretly I was debating on tossing them in the trash.
I’m not sure why I had to act like these things didn’t gross me out…who was I trying to impress? Me and the BF have been together for over three years and there are way weirder things about me besides my abhorrence of little green dots, such as my dislike for watermelon and raisins (he bugs me about the dang raisins all the time…they are a gross texture and makes my mouth go bleh. get over it.).
So we put some peas into the Tai food and it turned out sensational! I could barely tell the peas were there and I did not once gag while I was eating. Ta-da!
I figured I would continue to use the same principal with the eating of peas from now on…mix em with delicious things to make them less noticeable while also adding the benefit of eating veggies in my meal.
Grilled Chicken Scampi with a Kick
Serves 1
Ingredients:
- Leftover scampi noodles
- Grilled chicken (mine was frozen so I just popped it in the toaster oven)
- PEAS
- Spicy asian zing sauce
- Pinch of mozarella
How To:
- Heat chicken according to directions.
- When chicken is almost done: heat 1/8 cup frozen peas in microwave with 1TBS water for 1 minute
- Add to the peas leftover scampi noodles (or if you made the noodles fresh, add the peas to the scampi and do not heat further) and heat 45 seconds
- Add a spoonfull of asian zing sauce (or to taste) to noodles and peas. Stir.
- Cut up chicken. Add to noodles. Mix all around.
- Add a bit of mozarella to the top as well as pepper to taste. Voila.
Mac n Peas with Spicy Chicken
Serves 1
Ingredients:
- Easy mac
- PEAS
- Spicy chicken tenders
How To:
- Heat tenders according to instructions.
- Towards the end of heating tenders, microwave 1/8 cup peas and 1 TBS water for 1 minute.
- Heat easy mac according to instructions. Add peas and cheese mix. Carefully mix together.
- Add tenders to the top. Voila.

Although these are not revolutionary meals, they work for a gal who is eating all by her lonesome (okay the Daddio was home…but all he eats is popcorn!) and who is trying to overcome her fear of the little green things known as PEAS. Not to mention the fact that there is a bag sitting in the freezer that needs to be used up anyhow. Win-win. Win.
Oh and I mentioned before that I never used to like oranges? Well now that I’ve tried “cuties” (little tangerines) I may be trying oranges soon. These little orange things are adorable, sweet and juicy. Plus filled with much-needed vitamin C so if I can just eat enough to kill my cold for good!

Then the boring older sister will be commanding the fun-loving younger sister to do her homework…probably because the older sister has homework to do as well.
