Well I have had a stressful morning trying to figure out classes for this next quarter/semester.
Yep there is a next quarter AND a next semester because I am taking one class at the local community college (Chemistry..ekk) and at least one class at a University about an hour away (Anatomy…double ekk). Trying to figure out how to work those two classes in PLUS a possible third at the University PLUS keeping my job(s)…has been…ekkkkk
I got hungry after a lot of frowning and scribbling down times of classes and realized I really needed to go shopping. And since it’s bad news bears to go shopping on an empty stomach…I went through the fridge and decided to make some impromptu-makeshift french toast and scrambled eggs.
Because nothing cures the college classes blues like breakfast at 2. Right??
Creative French Toast
Ingredients:
- 2 large eggs
- 1tsp almond flavoring
- 1TBS cinnamon sugar
- 1TBS light vanilla soymilk
- 2 Orowheat Sandwich Thins
- 2 TBS Creamy Peanutbutter
How To:
- Whip up eggs, almond, cinnamon sugar, and light vanilla soymilk.
- Heat up a skillet on medium heat. Spray with cooking spray.
- Soak slices of sandwich thins in egg mixture and fry em up on both sides in the skillet.
- Fry remaining egg mixture in skillet.
- Put peanutbutter in a microwave-safe bowl and nuke for 20 seconds. This makes a melty peanutbutter sauce for your french toast!
- Add some broccoli on the side and a glass of OJ if you feel guilty about not having fruit or vegetables with your meal…
Well I added the broccoli out of lack-of-veggies-and-fruit guilt..but then got too full to eat them!! Oh well the meal hit the spot (actually I’m feeling quite full).
It is a shame, however, that the school schedule didn’t miraculously work itself out while I was frying up this goodness…
This is a big step for me…actually going to the university to start my real classes. I’m worried about the hour drive multiple times a week (to and fro), nervous that the classes will be harder, intimidated about the number of classmates I will have and not quite sure how it will work out financially. Oh and I gotta work sometime in there too, eh? Oh good golly!
I know it will work out. And I really am excited about the classes I get to take (not Anatomy) like all of my nutrition classes and there’s one about metabolism that I’m pumped to take. Trying to be positive!
Does school scheduling ever stress you out? Or is it just me??
I need some perspective/encouragement!! How do you deal with school stress??
