Saturday the BF and I were about to head out to his farm when I realized I was pretty hungry.
I thought we were in a bit of a rush to see his family so I was thinking BK breakfast (yikes) and when I realized breakfast was over about 3 hours before that, the BF said Sonic had breakfast all day. I was also a bit tired so I was envisioning a blended coffee drink from a local coffee joint…
Talk about reasons to be prepared with healthy food! How many calories would I have consumed if I had eaten a sonic burrito and had a blended coffee drink??
So…the BF suggested we just make some omelets at his parent’s house…with fresh vegetables! He said he’s trying to eat more veggies and more power to him! (I’d like to think I inspired him 😉 )

The burritos were pretty easy to make…
Veggie Omelet Burritos
Ingredients:
- 2 eggs/person
- bacon crumbles
- diced onion
- diced green pepper
- shredded monterey jack cheese
- tortillas (preferably whole wheat)
- olive oil (for sauteing)
- any other veggies you want!
How to:
- Saute veggies and bacon in olive oil.
- Add eggs and scramble.
- Serve in tortilla with a little cheese on top.
- If you are BF, add homemade salsa as well. 🙂

We had a short weekend at the farm because I had to work Monday night (yep I worked on Labor Day…apparently people still want beer and wings even on holidays).
I’m training for a 10K coming up on September 18th so I wanted to make sure I got some kind of workout in over the weekend…so I decided to go for a walk in the soybean field! The farm is so peaceful and relaxing. Waking up and looking out the window at the vast farmland and crisp Fall sky is breathtaking. (I won’t mention how my allergies decided to go crazy in this Fall weather because that would ruin it.) And at night the stars are so bright and plentiful it’s astounding. Nothing like the city!
We ended up doing a 2 mile walk around the farm while the BF pointed out things like random corn poking through the soybeans because the farmer who farms the land made a mistake…old farm equipment that farmers just leave in the field and let grass grow around it…”burn piles” (just another name for trash pile that a farmer may or may not burn someday)…

I am very thankful to have such a sweet BF that is able to spend 3 hours both ways in the car to and from his family farm while I talk to him about all of the interesting articles in Self and Bon Apetit Magazines. He even did a Self quiz for me! AND he drove both ways…but he is a guy so maybe he doesn’t mind it. What an amazing weekend! 🙂
