Oatmeal Bread (Healthier and Sweeter versions!)

I got a request from the Daddio this week to make some kind of bread for his bible study this week…what to make what to make…

 I also was blog surfing and saw a fellow blogger  Lee make healthy chocolate chip cookie bites with homemade oatmeal flour and I thought, maybe I can translate that into bread somehow?  I do love oatmeal!  Don’t you?? 🙂

Oatmeal Granola Bread {Print Recipe}

Recipe modified from allrecipes.com

Ingredients: (+ Sweeter version)

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 TBS salt
  • 1 TBS honey + 1 TBS honey for topping (2 TBS honey inside and on top)
  • 1 tablespoon olive oil
  • 1 cup light vanilla soy milk (regular soy milk) 
  • 1/2 cup granola for topping (+ 1/2 cup granola mixed in batter)
  • (1/4 to 1/2 cup sugar)
  • (Chocolate almond bark for topping)

You had me at chocolate and hazelnut…oh and biscotti 🙂

I used this little guy to grind up the oats…took some time but worth it!

How To:

  1. Preheat oven to 350 degrees F.
  2. Grind oatmeal in a food processor or blender. 
  3. In a large bowl, combine oatmeal, flour, baking powder and salt. 
  4. In a separate bowl, dissolve honey in vegetable oil then stir in the milk. 
  5. Combine both mixtures and stir until a soft dough is formed. Form the dough into a ball or pour the batter into a lightly oiled bread pan.
  6. Top with honey and granola to taste. 
  7. Bake in preheated oven for about 30 minutes, or until edges are brown. Set on top of stove to cool about 10 minutes.
  8. Slice and add butter, margarine or more honey!
  9. For the sweeter version…melt almond bark according to package and drizzle on top!


Be patient with the blender…or you can use a coffee bean grinder or food processor

Just the right texture for me but you may want to blend more 🙂

Another fun part of my day…
Do you like getting packages in the mail?  I do!  It’s like Christmas because sometimes I forget what I bought or I bought a couple of things and I got three packages within the past two days!
The first one…school books…okay that wasn’t so fun.
The second one: an Obol from my friend Sarah!  What a sweetheart. 🙂  She saw my post from my Chicago Trip and decided to send me one!  LOVE HER!

I also got a new cover for my blackberry in the mail!  It’s so cute it’s like my phone has an argyle sweater! 🙂  And it will hopefully help to protect my phone from my seemingly inevitable phone damaging issues…
I should get a matching sweater, yes?
 Well I am going out of town AGAIN this weekend so I better finish packing!  We are headed to the BF’s farm for a short labor day weekend (we both work Monday).
